Before i begin my post on these uber delicious gluten free vegan buckwheat flour pancakes, let’s discuss this buckwheat thingy, ok? Okay. Buckwheat is called as kuttu in hindi and Papparai in Tamil. Even though it reads buckWHEAT, it is no way related to wheat. It is a gluten free and is a psuedocereal like amaranth and quinoa seeds. Technically, the buckwheat that is used in the west is different from that which is used in the eastern side even though they belong to the same family.

Buckwheat is a celiac- friendly food that can easily be used to substitute wheat based recipes. The kuttu ki poori is a popular dish in the northern and central India. This is a deep fried flat bread made with buckwheat flour and potatoes. I recently bought a packet of buckwheat flour to experiment with a couple of recipes other than that kuttu ki poori. I whipped up these delicious pancakes one morning for breakfast and served it up with some mixed berry compote. The result was a very happy Lil A and needless to say, a happy mom.

These gluten free vegan buckwheat pancakes use almond milk, banana puree and a generous amount of cinnamon for the flavor. You can experiment with flavors of your choice. I replaced the egg with flax egg and this added a rustic chewy feel to these pancakes.

Ingredients

  • Buckwheat flour 1 cup
  • Baking soda 1 tsp
  • Almond milk 1 cup
  • Vanilla extract 2 tsp
  • Cinnamon powder 1 tsp
  • Banana puree 1/4 cup
  • Coconut sugar or any sweetener of your choice 1/2 cup
  • Flax meal 1 tbsp
  • Salt a pinch
  • Vegetable oil 2 tbsp
  • Oil for grilling the pancakes

Instructions

  • In a large mixing bowl, combine flax meal, coconut sugar, vegetable oil, banana puree, cinnamon powder, almond milk, salt and vanilla.
  • Whisk thoroughly.
  • Add baking soda to this and mix well.
  • Immediately tip in the buckwheat flour and mix well using whisk.
  • Heat a non stick skillet.
  • Pour 1/4 cup of the batter on the pan, reduce flame to medium and cook till small bubbles appear in the middle,
  • Drizzle oil around the edges and flip and cook for another 2 mins.
  • Remove and serve hot.
  • Repeat with remaining batter.
  • Alternatively, you can make the pancakes and freeze them after letting them cool completely.
  • To freeze the pancakes, separate each pancake by inserting a sheet of parchment in between.
  • Place in ziploc bags and freeze.

Mor Milagai Milagu Kuzhambu is something that i discovered a few years back from a small booklet by Mrs. Revathy Shanmugam. I have made this kuzhambu umpteen times since then. I make this mor milagai milagu kuzhambu whenever Mr. P or i fall sick. The internet has its share of milagu kuzhambu recipes. But this one stands out from the crowd because it uses milagai vathal or mor milagai. For those who don’t know, mor milagai is nothing but green chilies marinated in buttermilk and sun dried. These chilies are fried in ghee and served as an accompaniment to curd rice.

While i do make the regular milagu kuzhambu, i treasure this mor milagai milagu kuzhambu recipe because of its nutrient dense composition. It uses shallots, garlic, whole peppercorns and sun dried chilies which come together like a symphony in a tangy tamarind base. This is then simmered till thick and served hot with steamed rice and a drizzle of sesame oil. Needless to say, the medicinal properties of this kuzhambu make it ideal for those with a cold or indigestion. And the best part is this mor milagai milagu kuzhambu can work wonders on days when you don’t have veggies for substantial cooking. This kuzhambu keeps well in the fridge for up to a week and at room temperature for 2 days.Shall we now check how to make mor milagai milagu kuzhambu step by step?

Step By Step Tutorial For Mor Milagai Milagu Kuzhambu

Peel shallots and garlic. Chop tomato finely. Soak tamarind in warm water, mash well and make tamarind extract. Heat a pan with 1 tbsp oil and fry the mor milagai until golden. Drain and set aside. In the same pan, add urad dal, channa dal, whole pepper corns and cumin seeds.

Fry till dal turns golden. Now, add shallots and garlic and fry till shallots turn translucent. Once done, add tomato and fry till mushy. Add fried mor milaga to the pan and mix well. Let cool. Place this mixture in a blender and blend to a smooth paste. Set aside.

Heat the same pan with 2 tbsp oil. Add 4 shallots and 4 garlic cloves and fry till light brown. Add coriander powder and red chili powder to the tamarind extract and mix well. Pour this to the pan along with the ground paste and add salt and turmeric powder. Let this simmer till the raw smell of tamarind goes away. Takes about 5 mins on high flame.

Once the raw smell goes away and the kuzhambu has thickened considerably, switch off flame. Heat a small pan with sesame oil. Add mustard seeds and once they pop, add curry leaves and urad dal. Pour tempering over kuzhambu and mix well.

Your mor milagai milagu kuzhambu is ready. Serve hot with rice and any curry of your choice. Chenai kizhangu fry or beetroot curry will work with this.

Ingredients

  • Shallots 5 peeled
  • Garlic cloves 5 peeled
  • Sesame oil 2 tbsp
  • Tomato 1 medium chopped finely
  • Turmeric powder 1 tsp
  • Red chili powder 1 tsp
  • Coriander powder 1 tsp
  • Tamarind extract 1 cup
  • Salt to taste
  • For The Spice Paste:
  • Mor Milagai 5
  • Garlic 5 peeled
  • Shallots 5 peeled
  • Channa dal 1 tbsp
  • Urad dal 1 tbsp
  • Whole black pepper corns 2 tsp
  • Cumin seeds 1/2 tsp
  • Sesame oil 1 tbsp
  • For Tempering:
  • Mustard seeds 1 tsp
  • Fenugreek seeds 1 tsp
  • Curry leaves a sprig
  • Sesame oil 2 tsp

Instructions

  • Heat a pan with 2 tbsp oil.
  • Fry the mor milagai until brown and set aside.
  • In the same pan, add urad dal, channa dal, black peppercorns, cumin seeds and fry till the dal begins to turn light brown.
  • At this stage, add 5 shallots and 5 garlic cloves and fry till shallots turn translucent.
  • Now add chopped tomatoes and fry till mushy.
  • Once done, add the fried mor milagai and continue to cook for a min.
  • Once done, let cool completely .
  • Blend this mixture to a fine paste in a blender.
  • Heat 1 tbsp oil in the same pan that you used to fry the ingredients for the spice paste.
  • Add 5 shallots and 5 cloves of garlic and fry till shallots turn translucent.
  • Mix coriander powder and chili powder into the tamarind extract.
  • Add this to the pan along with salt, ground paste and turmeric powder.
  • Let this simmer till the raw smell of the tamarind goes away and the kuzhambu thickens considerably.
  • Takes about 5 to 7 mins on medium flame.
  • Once the kuzhambu has thickened, switch off flame.
  • Heat a small pan with 2 tsp oil.
  • Pop the mustard seeds and add fenugreek seeds and curry leaves.
  • Pour tempering over the kuzhambu and mix well.
  • Serve hot with rice and curry of your choice.
  • This kuzhambu keeps well for upto a week in the fridge and for 2 days at room temperature.

Couscous tikki is one of those party hits that you can make for your Iftaar parties. Well, the bliss in eating a good couscous tikki need not be limited to an Iftaar party alone. ย You can simply make these tikkis when you crave some fried food during this monsoon season. I love giving a desi touch to global foods. While i do enjoy a good tabbouleh replete with nuts and such, my Indian roots always tend to look for some heat in any savory dish that i eat. It is for this reason that i cannot relish wine with cheese. I prefer some crispy pakoda or a good bajji if i must drink wine. Strange but true.

So i often use ingredients that i may have purchased for other dishes in a very Indian way. And that is exactly what happened to that 1/4 container of pearl couscous. Unlike regular couscous, pearl couscous takes some time to cook. It has to be cooked in boiling water for 10 mins and allowed to stand for a few mins before usage. But i found that this pearl couscous works well as a substitute for pasta because of its chewy texture. After i had successfully made upma (see, i told ya. I love adding a desi twist to a non desi ingredient), i decided to make something in tune for Iftaar and Monsoons.

The moment the thought of monsoon hits my head, i m transported to the wonderful land of fried food.ย  ๐Ÿ˜† My peerkangai bajji has been a huge hit here on the blog. So this time, i wanted to do some frying but with some ingredients that i had not worked with before. I used za’atar spice, parsley and some chili flakes to flavor these tikkis. The potatoes were added for binding because i was really not sure if the couscous would hold well on its own. All in all, this couscous tikki lifted up our moods on a gloomy saturday evening a few weeks back. Couscous Tikki Recipe For Iftaar

Ingredients

  • Pearl couscous 1/2 c
  • Potato 1 medium peeled and boiled till mushy
  • Onion 1 small chopped very finely
  • Parsley 2 tbsp minced
  • Dill leaves 1 tbsp chopped finely
  • Ginger garlic paste 1 tsp
  • Red chili flakes 2 tsp
  • Za'atar 1.5 tsp
  • Lemon juice 1 tbsp
  • Salt to taste
  • Maida/ APF 1 tbsp
  • Water 1/4 c
  • Bread crumbs 1/2 cup
  • Oil for shallow frying

Instructions

  • Cook couscous according to package instructions. Let cool completely.
  • Once cool, add cooked potato, onion, dill, parsley, za'atar, chili flakes, ginger garlic paste, lemon juice and salt to the couscous.
  • Using the back of a ladle, mix well until the potato and the couscous incorporates into a rough looking dough. The mixture will be sticky. Use your hands if necessary but make sure to grease your hands with oil.
  • Once done, divide the mixture into 8 using a scoop.
  • Shape each scoop into a thick disc.
  • Mix maida with water to form a thick batter.
  • Dip each patty in the maida mixture ensuring that it is well coated
  • Now roll each patty in the bread crumbs making sure that the crumbs coat the tikki evenly on all sides.
  • Once done, place all tikkis on a baking sheet and refrigerate for 2 hours.
  • After two hours, heat oil in a shallow pan.
  • Place tikki in batches and fry till golden brown. Make sure you turn the tikkis while frying to ensure even frying.
  • Drain on a kitchen towel.
  • Serve hot with any dip of choice.

Bok Choy kootu is my humble attempt at giving the bok choy or pak choi a desi makeover. Bok Choy is a very popular greens found here in South East Asian countries. It really cannot be classified as greens because it belongs to the cabbage family. The locals here in Singapore eat a lot of bok choy. They add it to everything from stir fries to soups. I have earlier attempted making fried rice with these leafy cabbage like stalks and they pack a punch in terms of flavor.

This bok choy kootu was put together when i had too little bok choy to make much else but kootu. You need a lot of bok choy for a decent stir fry and i was really not in a mood to make a soup. And so i decided that Bok Choy Kootu it shall be. I was not sure if it would be received well by the inmates of the Praveen household. So i was surprised to see that it went down well with roti and rice alike.

I do not like wasting the scraps and stalks of veggies. I try to make use of them as much as possible. So i used up two entire heads of Bok Choy, stalk and all for this kootu. We get many kinds of Bok Choy ranging from dark green ones with smallish leaves to big stalks with light green leaves. I used the light green variety for this Bok Choy kootu but i m sure any kind will work well. Just in case you like kootu like me, then do try this broccoli kootu too.

Ingredients

  • Bok Choy 2 medium chopped finely
  • Onion 1 medium peeled and chopped finely
  • Tomato 1 smallish chopped finely
  • Moong dal 1/4 cup
  • Oil 2 tbsp
  • Turmeric powder 1/2 tsp
  • Curry leaves a sprig
  • Mustard seeds 1 tsp
  • Urad dal 1 tsp
  • For The Spice Paste:
  • Freshly grated coconut 2 tbsp
  • Cumin seeds 1 tsp
  • Green chilies 4 to 5

Instructions

  • Dry roast moong dal in a pan on medium flame until aromatic.
  • Once done, combine bok choy, turmeric powder, salt and moong dal with 1 cup of water and pressure cook till dal turns mushy. Takes 3 to 4 whistles.
  • Let the pressure come down naturally.
  • Once the pressure has released, remove and mash the mixture using the back of a ladle.
  • Place grated coconut, cumin seeds and green chilies in a blender and blend to a smooth paste using 2 tbsp of water.
  • In the same pan that you used for roasting the dal, heat 2 tbsp oil.
  • Pop the mustard seeds and add curry leaves and urad dal next.
  • Once dal turns golden brown, add the onions and fry till translucent.
  • Once done, add tomatoes and cook till they turn mushy.
  • When the tomatoes become mushy, add the dal mixture and the ground paste and mix well.
  • Let this simmer on medium flame for 5 mins.
  • Once done, garnish with curry leaves
  • Serve hot with rice or roti

Karuveppilai sadam or curry leaves rice is a wonderful way of incorporating curry leaves to your diet. Karuveppilai or the humble curry leaf is a power house of nutrition with so many benefits. It is good for your hair and helps in weight loss to a certain extent. It is also said that these leaves help in fighting cholesterol, anemia and managing diabetes. In south Indian cooking, the tadka or the tempering is unimaginable without a sprig of curry leaves while the Northern parts of India use these leaves to flavor their signature kadhiย which is probably how they got their name in Hindi- Kadi Patha.

My mothers house has a jungle of curry leaf plants, yes, literally a jungle. I almost cringe every time i pay a dollar to pick up ย a bunch of curry leaves here in Singapore. But i cannot imagine making rasam or mor kuzhambu without these flavorful and earthy leaves and hence i keep telling myself, someday, i ll have ย jungle of curry leaves too. Mr. P, the husband man has never been serious about his weight in the past. He has been working out with a passion and is determined to shed a few kilos before this year goes by.

In order to help him with his mission and because my daughter loves picking out the cashews from this karuveppilai sadam, i make this very often. I usually pair this karuveppilai sadam with a raita and a pan fried vegetable. In the above picture, you are seeing karuveppilai sadam, carrot raita and sweet potato podi curry. While i personally love a good jodhpuri aloo with the karuveppilai sadam, i made the sweet potato curry keeping the husband man in mind.

This recipe comes together in 15 mins if you have leftover rice handy. Fresh curry leaves work best here. I love adding the cashews for a nice crunch. You can also replace half the oil with ghee if you are making it for children. Like all south Indian recipes, this rice dish allows you to add anything you like to ย enhance tasteย . You can add veggies to this if you like. The only key to making a good karuveppilai sadam is that your curry leaves need to be fresh.

Ingredients

  • Leftover cooked rice 2 cups Preferably short grain rice
  • Oil 3 tbsp
  • Cashews 10 to 12 broken
  • Turmeric powder 1/2 tsp
  • For The Spice Paste:
  • Fresh curry leaves 1 cup packed
  • Urad dal 1 tsp
  • Tamarind a small marble sized piece
  • Dry red chilies 4 to 5
  • Fenugreek seeds 1/2 tsp
  • Coriander seeds 1 tsp
  • Oil 1 tsp
  • Salt to taste
  • For Tempering:
  • Mustard seeds 1 tsp
  • Urad dal 1 tsp

Instructions

  • Heat a pan with 1 tsp oil.
  • Add urad dal, dry red chilies, tamarind, coriander seeds and fenugreek seeds
  • Fry these till the urad dal turns golden. Make sure that the flame is on a medium low because spices burn fast.
  • Once dal turns brown, add the washed and dried curry leaves and fry till the curry leaves shrink in size.
  • Add salt to this and let cool.
  • Once cool, place all of this in a blender and blend to a smooth paste using not more than 1.5 tbsp of water.
  • Now in the same pan that you fried the curry leaves, heat 3 tbsp oil.
  • Once hot, add broken cashews and fry till golden.
  • Drain on a kitchen towel,
  • Now to the remaining oil, add mustard seeds.
  • Once the seeds pop, add the urad dal and fry till light brown.
  • Add turmeric powder now and immediately add the ground paste.
  • Mix well and cook till the paste becomes thick.
  • Once done, add rice and mix well.
  • Adjust salt at this stage if required.
  • Add fried cashews and mix again.
  • Serve hot with raita and chips

These spring roll salad jars are a blessing on weekdays when you have no time to cook. And these are also very apt for people looking to lose weight. With minimal amount of rice noodles and loads of fresh veggies, these provide the essential nutrients and also keep you full. I have not used rice noodles before coming here to Singapore. When i came here, i was simply stumped to see so many varieties of noodles. But what amazed me was the concept of rice noodles. Coming back to the spring roll salad, i recently tried my hands at making vietnamese style spring rolls at home. I decided not to post them here because i need to practice folding them well. But i was left over with the filling and the dipping sauce that i had made for the spring rolls. That is when the idea of making these deconstructed spring rolls or spring roll salad in a jar struck me. The only time consuming thing in this salad is the chopping work. Once you chop your veggies, you can make this salad in under 10 mins.

Again, you can use any vegetables of your choice ranging from carrots to fresh lettuce to baby spinach. But i just kept it very basic and minimal. I used a combination of peanut butter, sriracha and soy sauce to make my dipping sauce. And the umami flavors just came together so well. Just let your imagination run wild when you make this salad. No matter whatvegetables you throw or dont throw into this spring roll salad, you will feel totally satisfied once you eat it. And make sure you use fresh herbs in plenty.

Ingredients

  • Cucumber 1 peeled and cut into julienne
  • Carrot 1 smallish peeled and cut into julienne
  • Red yellow and green bell peppers cut into long strips 1/2 c
  • Beijing Cabbage 1/4 c shredded
  • Purple cabbage 2 tbsp shredded
  • Mint leaves 10 chopped finely
  • Coriander leaves 2 tbsp chopped finely
  • Uncooked rice noodles 50 g
  • For The Dressing
  • Peanut butter 1 tbsp
  • Sriracha sauce 1 tbsp
  • Soy sauce 1 tsp
  • Lemon juice 2 tsp

Instructions

  • Cook rice noodles according to package instructions. Once done, drain water completely.
  • To make the dressing, place peanut butter, soy sauce, sriracha and lemon juice in a bowl.
  • Whisk thoroughly till smooth. Your dressing is ready.
  • In a small mason jar, place the carrots at the bottom and proceed making layers alternating between veggies, herbs and noodles.
  • Once you have assembled layers covering half the jar, spoon the dressing over the top most layer.
  • Assemble the remaining veggies, noodles and herbs in layers.
  • Chill in the fridge for an hour.
  • Serve cold.

Peerkangai Bajji or heerekai bajji is a popular snack made across many Kannada homes. Tamil people mostly use onion, potato and raw plantains for making bajji. Bajji is nothing but a crispy deep fried snack which is prepared tempura style by using vegetables. Bajjis are often associated with pon parthal, a custom in which a prospective groom comes to look at his future bride along with his family. If everything goes well, the marriage is finalised. Usually, a snack of bajji or bonda along with some kesari and hot piping coffee is served for the guests during this time. The first time i heard about peerkangai bajji was from Mr.P. He told me that during his brief stay in Bangalore during his internship days, there used to be an aunt who used to make peerkangai bajji and serve it with some delicious coconut chutney. I had never heard of peerkangai bajji before that. And i m really glad i did. Because it changed my bajji perspective. Now, i make bajji whenever i buy ridge gourd. The recipe is pretty simple. Mr.P s granny used to make bajji with freshly ground wet batter made with soaked gram dal and rice. I will share that method very soon. Peerkangai Bajji Recipe

Ingredients

  • Ridge Gourd/ Loofah 1 long peeled and sliced into 3mm discs
  • Besan/ chickpea flour/ Kadala Maavu 1/2 c + 1 tbsp
  • Rice flour 1 tbsp
  • Red chili powder 1.5 tsp
  • Hing a small pinch
  • Salt to taste
  • Oil for deep frying

Instructions

  • In a large mixing bowl, sieve together chickpea flour, rice flour , salt, hing and chili powder.
  • Add water gradually and make a thick batter. The batter should be slightly runnier than dosa batter.
  • Heat oil in a pan.
  • Drop a small spoon of batter into the oil. If it floats quickly to the top, the oil is ready for frying.
  • Now, dip discs of ridge gourd in the batter until well coated.
  • Fry in batches until golden on medium flame.
  • Serve hot with any chutney or dip.

What is Puli Kulambu?

Puli in Tamil refers to tamarind. Sometimes referred to as Kuzhambu, this means a stew in Tamil. Like all Kuzhambu recipes, the recipe forย  Puli Kuzhambu too differs from home to home.ย 

It doesn’t have anything fancy. Yet, it makes a delicious, tangy and satisfying meal when served with rice and poppadum. You can also make the same kuzhambu with vegetables like eggplant and drumstick.

Recipe Notes

Please try to use old tamarind for this kuzhambu. Also, freshly grated coconut works best. You can make this with frozen coconut that has been thawed. But desiccated coconut will not work here.

Method

Soaking tamarind

Soak tamarind in 1 cup of warm water for 20 mins. Mash the tamarind well into the water and make an extract. Make sure you discard all strings by straining the water. I never strain the water. I pour the extract through a slotted ladle into the pan directly. Something i learned from Amma ๐Ÿ˜‰

Prepping veggies

Peel shallots and garlic.Wash and pat dry the okra. Chop them into 2″ pieces. Chop tomatoes finely. You can see bits of coconut here in the plate. I don’t bother grating my coconut. I just scrape off the flesh from shell, chop into pieces and use these. Here I have used about 1/4 ย of a coconut.

Frying the okra

Heat a pan with oil. Fry the okra pieces until they begin to brown and drain on a kitchen towel.

Frying shallots, garlic and tomatoes

In the same pan, add 1 tbsp more oil. Add shallots and garlic and fry till light brown. Now, to this add the tomatoes and fry till mushy. Once the tomatoes are done, add the spice powders and mix well. Cook for 30 secs. Remove from flame and let cool completely.

Making the spice paste

Once cool, combine with the coconut and grind to a smooth paste. I  did not use any water for grinding.

Making Puli Kuzhambu

Now, in the same pan, add the fried okra along with the tamarind extract and salt and mix well. Add sambar powder to this and mix. Let simmer till the raw smell of the tamarind goes away. This takes about 5 mins on medium flame.

Once done, add the ground paste and mix well. Let this simmer for about 4 to 5 mins on low flame. When the Kuzhambu froths up, switch off flame.

Heat a small pan with 1 tbsp. Pop the mustard and add the fenugreek, urad dal and fennel seeds along with curry leaves. Once the dal begins to brown, pour this over the kuzhambu and mix well.

Your Kuzhambu is ready to be served with rice.

Equipment

  • Frying Pan
  • Blender

Ingredients

  • 12 Okra dried and chopped into 2″ pieces
  • 6 to 7 Shallots peeled
  • 4 cloves Garlic peeled
  • 1/2 cup finely chopped tomatoes
  • 6 grams Tamarind
  • 1 cup hot water
  • 3 tbsp Grated fresh coconut
  • 1.25 tsp Coriander powder
  • 1 tsp Red chili powder
  • 1 tsp Turmeric powder
  • 1 tsp Sambar powder
  • 2 tsp Salt or to taste
  • 3 tbsp Sesame oil
  • 1 tsp Mustard seeds
  • 1 tsp Fenugreek seeds
  • 1 tsp Urad dal 1 tsp
  • 10 leaves Curry leaves
  • 1/2 tsp Fennel seeds

Instructions

  • Make tamarind extract by mashing the tamarind well with water and straining it. Set aside.
  • Heat a pan with 1 tbsp oil and fry the okra till it begins to brown.
  • Drain and set aside.
  • In the same pan, heat 1 tbsp oil.
  • Add shallot and garlic to this and fry till light brown.
  • Now add tomatoes and fry till mushy.
  • Next add chili powder, turmeric and coriander powder to this and mix well. Cook for 30 secs.
  • Remove from flame and let this mixture cool.
  • Once cool, combine the tomato mixture with grated coconut and blend to a smooth paste in a blender.
  • In the same pan that you fried the shallots etc, add the okra pieces along with the tamarind and salt and mix well.
  • Add sambar powder to this and mix.
  • Let simmer till the raw smell of tamarind goes away.
  • Once done, add the ground spice paste and mix well.
  • Let simmer till kuzhambu froths up.
  • Heat a small pan with the remaining oil.
  • Pop the mustard and tip in the urad dal, curry leaves, fenugreek seeds and fennel seeds.
  • Once dal begins to brown, pour the tempering over the kuzhambu.
  • Mix well.
  • Serve hot with rice.

Homemade chocolate ice cream with roasted berries is a true delight during hot summers. Technically, this was supposed to be just good old homemade chocolate ice cream. Ever since i began making ice cream at home, we have stopped eating ice cream outside. Seriously, nothing can equal a scoop of homemade chocolate ice cream or strawberry ice cream. While we love both chocolate and strawberry ice creams individually, the idea of combining the both came to me when a box of strawberries was reaching its prime. I decided to roast the berries in the oven until juicy and toss them in with my homemade chocolate ice cream. This however is totally optional. You can keep this as just some plain old chocolate ice cream.

This ice cream is something that will make you look like ice cream queen. Why? Because it is no churn. It has no eggs. It doesn’t need fancy equipment, no, not even a fancy ice cream tin. And its rich, creamy, velvety and oh so chocolatey! Yes, i made that word up. I love making my own words. Especially, when it comes to describing my homemade chocolate ice cream with roasted berries. I used a freezer safe take away container to make this ice cream. My sorry pictures bear testimony to that. I did not go to any lengths to take beautiful photos this time. Because i forgot to freeze my bowls every single time i planned a shoot and i ran out of ice cubes, thanks to summer.

That said and done, let me talk some more chocolate ice cream. Ok, i know. I m talking a lot. But guys, this is chocolate ice cream without an ice cream maker. So pleassseeeee bear with me, ok? Okay. I used some good quality chocolate chips to make this ice cream. And a very teeny tiny amount of cocoa powder to bring out that color. Also, i roasted the strawberries i Balsamic. That kind of really gave a nice tang to the bitter sweet chocolate ice cream. You got to trust me on this one.While this homemade chocolate ice cream is an indulgence all on its own, a handful of roasted berries takes it to a gourmet level. So, if you can get your hands on some good strawberries, which i m sure you can, it being summer, then please roast them and mix them in. So, shall we get a move on with the recipe, then? I guess, i have talked enough.

Homemade Chocolate Ice Cream Eggless No Churn Recipe

Homemade Chocolate Ice Cream With Roasted Berries- An easy and decadent chocolate ice cream recipe. No churn. No eggs. No Ice Cream maker needed.

Ingredients

  • For The Chocolate Ice Cream
  • Condensed milk 300 ml
  • Heavy cream 140 ml
  • Dark chocolate chips 3/4 c + 2 tbsp
  • Unsweetened cocoa powder 1 tbsp
  • Vanilla extract 1 tsp
  • For The Roasted Berries
  • Strawberries 10 to 12
  • Balsamic vinegar 2 tsp
  • Sugar 1 tsp

Instructions

  • In a microwave safe bowl, combine 3/4 c of chocolate chips with half the cream and microwave on high for 1 min in 20 sec intervals.
  • Make sure you stop every 20 secs and give the chips a good stir.
  • Also ensure that the chips are completely melted. This may take a little more than 1 min depending on your microwave.
  • Once done, remove from the microwave and set aside.
  • In another large mixing bowl, add the remaining cream and whip till stiff peaks form.
  • Now, add the condensed milk, vanilla, melted chocolate chip mixture and cocoa powder and whip again until well incorporated.
  • Pour the mixture into a freezer safe container and freeze for about 4 hours or until set.
  • Towards the end of the setting time, preheat your oven to 180 C.
  • Place the strawberries in a shallow roasting pan.
  • Drizzle the balsamic vinegar on top of the strawberries and sprinkle sugar.
  • Toss lightly.
  • Roast in the preheated oven until strawberries begin to bubble .
  • Set aside to cool.
  • Once set, remove from the freezer.
  • Place the ice cream in a high power blender and blend to smooth.
  • Now, pour this back into a freezer safe dish.
  • Add 2 tbsp chocolate chips into this and mix using a fork.
  • Now, add the roasted strawberries along with all the liquid and gently mix with a fork taking care not to bruise the berries further.
  • You may be lucky to even get a swirled pattern in your ice cream if you do this patiently.
  • Once done, return the container back to the freezer and freeze overnight.
  • The next day, scoop and serve immediately.

Notes

1. This ice cream calls for a longer freezing time because there is no sugar used.
2. Addition of roasted berries is optional but highly recommended

Mango lemonade is probably the best way to indulge in lemonade. There is really nothing better on a hot Summer’s afternoon than a lemonade that is bursting with the flavors of fresh mangoes. I had too many mangoes from my recent visit to Mustafa. After making some delicious mango gelee panacotta and this crazy good mango jalapeno taco sauce, i was left with about 2 cups of chopped Alphonso mangoes. Singapore has been getting hotter over this month and i decided that mango lemonade is going to be one helluva way to beat the heat.

When i made the mango lemonade for the first time, i was really not very impressed. There was something missing. Yes, i was very sure. You see, i have become very particular over the years about my lemonade. And so, i decided to experiment a bit with this version. I thought a nice Indian spicy kick would take my mango lemonade to a different level and i was not wrong. This lemonade calls for very simple ingredients but the key to making fine mango lemonade lies in finding the best mangoes you can lay your hands on. I added a bit of Jaljeera powder to give the lemonade a new flavor but feel free to skip it if you are not a Jaljeera fan.

Ingredients

  • Mangoes 2 cups peeled and chopped see notes below
  • Lemon juice 1/4 c
  • Sugar 1/2 c
  • Water 1/2 c
  • Jaljeera powder 1/2 tsp
  • Mint leaves 10
  • Lemon wedges to serve
  • Ice cubes to serve

Instructions

  • Combine sugar and water along with the mint in a pan.
  • Heat the pan until sugar melts completely.
  • Let the syrup cool completely.
  • Once cool, strain and discard the mint leaves.
  • Add lemon juice to this and mix well.
  • Place the mangoes, jaljeera powder and the simple syrup in a blender and blend to a smooth puree.
  • Once done, pour into a clean bottle and store in the fridge.
  • To make one glass of mango lemonade, combine 2 parts of mango lemonade concentrate and 4 parts of cold water and mix well.
  • Add lemon wedges and ice cubes.
  • Serve immediately.

Notes

1. I used Alphonso mangoes for this. You can use any type of mangoes as long as there are sweet and have a prominent flavor.
2. The mangoes were too sweet and so i used only 1/2 c of sugar. In case your mangoes are not very sweet, increase the sugar to 3/4 c and use equal amount of water to make the simple syrup
3. The concentrate keeps well in the fridge for a week.

Chickpea Salad Tacos is a filling taco meal that has a nutritious flavor packed chickpea salad, guacamole and a delicious mango taco sauce. I love tacos and its probably my favorite Mexican food closely followed by a Burrito bowl. But Mr.P is not a big fan. Come to think of it, Mr. P is not a fan of anything that is not Indian. So, when i do usually make some things that are not definitively Indian, i resort to adding an Indian touch to get the man eat and save myself the trouble of making dosa. Thankfully, Mexican food can easily be adapted to make it look deceptively Indian and the man enjoys a taco or two. But this chickpea salad tacos was made when he was not around. And hence the addition of guacamole and such.

I have used a robust salad chock full of veggies and chickpeas tossed in an assortment of spices for the filling. The toppings are this mango taco sauce and guacamole. These chickpea salad tacos made such a filling meal and was a welcome change to my roti subzi routine. If you live in India, then ย Godrej Nature Basketย s online store sells a range of taco shells including this12 piece taco shell box. They also stock a variety of taco sauce and seasonings.

These chickpea salad tacos involves three recipes and cooking the tacos either in the oven or in the microwave. I microwaved the taco shells for 1 min 30 secs. Honestly, i was really not in a mood to fire up the oven because i was just putting these together for myself. If you are making a large batch, then the oven route is worth the trouble. Ingredients

  • Taco shells 3
  • Cooked chickpeas 1/3 cup see notes
  • Butter head lettuce 2 tbsp shredded
  • Red bell pepper 3 tbsp finely chopped
  • Red onion 1 small finely chopped
  • Cucumber 1 small peeled and chopped finely
  • Cilantro leaves 1 tbsp chopped finely
  • Cumin powder 1 tsp
  • Red chili powder 1/2 tsp
  • Jalapeno 1 small minced finely
  • Lemon juice 1 tbsp
  • Salt to taste
  • Guacamole 5 to 6 tbsp

Instructions

  • In a bowl combine cooked chickpeas, onion, red bell pepper, lettuce, cucumber, cilantro, jalapeno, lemon juice, cumin powder and red chili powder along with salt.
  • Mix well or toss once.
  • Place the taco shells in the microwave open side facing down and cook on high for 1 min and 20 secs.
  • Remove and place open side up on a plate.
  • Place equal portions of the chickpea salad on the three taco shells.
  • Top with guacamole.
  • Drizzle the mango jalapeno taco sauce.
  • Serve warm.

Notes

1. I used leftover chickpeas that i had from another recipe. But you can also use canned chickpeas. Make sure you drain the water completely before mixing up the salad.

The avocado lover that i am, its simply difficult not to love guacamole. In the Praveen household, the way guac gets eaten is not limited to the chip and dip style. We like it on wraps and sandwiches. And sometimes, when i transform into that eccentric foodie woman, i like eating it with a spoon like someone would, an ice cream. The ingredients for that perfect chipotle style guacamole is the same just like any other average looking guacamole. But the order in which they are tossed to make that creamy guac is what makes the difference. Also, there are recipes for guacamole out there that call for adding tomatoes. But believe me, chipotle stye guacamole doesn’t have tomatoes in them. Also, you must use the right kind of pepper and the right amount of lime juice. And no, you cannot sub lemon juice for lime juice. And most importantly, choose the right kind of avocado. Your avocado must be ripe to perfection. Ingredients

  • Hass Avocado 1 medium
  • Lime juice 2 tsp
  • Jalapeno 1 medium minced finely
  • Red onion 1 small chopped very finely
  • Cilantro leaves 1 tbsp chopped finely

Instructions

  • Cut the avocado into halves.
  • Scoop out the flesh.

Mango jalapeno taco sauce is something that i blitzed up because i was too bored of the regular tomato based taco sauce and because i did not want to buy a bottle of taco sauce, only to let it sit in the pantry until it reaches its BB date. Come on, admit it. You have been there, done that too. Many of us mindlessly buy jars of condiments just to use them in one single recipe and then let them die a glorious death in the trash. That i religiously scrub the jars clean and upcycle them as props is another thing, totally. This time around, when my taco craving struck, i decided that i ll make my own sauce and i also decided that it s not going to have tomato in it. Nothing wrong, right? Right. My love for tacos began when Taco Bell opened its doors to Indian folks for the first time in Bangalore way back in 2009. And then i broke up with tacos for logistic reasons, until recently. I decided that i ll make tacos with an Indian touch so that the ever loyal Indian cuisine fanatic aka Mr.P will also be placated. This mango jalapeno taco sauce is an ode to my Indianised Taco making attempts. And you must trust me, you will not miss the tomato one bit.

Coming to the mango jalapeno taco sauce, this sauce is simply a myriad of flavors in a spoon. Ok,bowl. Fine? When i hoarded up my fridge with the mangoes from my last visit to Little India, little did i know that i would be making this taco sauce with them. Because i wanted my taco sauce to have a sweet note, i resorted to mangoes. And they worked perfectly fine because of their pulpy texture. Also, i did not use Alphonso mangoes here. I used a semi ripe Banganapalli because i felt an Alphonso would make the sauce too sweet. I guess i have talked enough here. Shall we get on with recipe?

Ingredients

  • Semi ripe mango 1 smallish peeled stoned and cubed
  • Jalapeno 1 medium stalks removed and minced
  • Cilantro leaves 2 tbsp chopped finely
  • Cumin powder 1/2 tsp
  • Garlic powder 1/2 tsp
  • Onion powder 1 tsp
  • Pimento powder 1/2 tsp see notes
  • Lemon juice 1 tbsp
  • Salt to taste

Instructions

  • Place all the ingredients in a high power blender and blend till smooth.
  • Add about 2 tbsp water if you find the sauce too thick and blend again.
  • Store in an airtight container in the fridge.
  • Use within 2 days.

Notes

Pimento is a type of chili powder. If you do not have it, substitute with 1/2 tsp of regular red chili powder.

Sweet potato smoothie bowl- Okay! i hear ya. Sweet potato in a smoothie, eh? Yes, you read right and before you begin wondering if I m sane, just give this smoothie bowl a chance, okay? A couple of weeks ago, I bought some Japanese sweet potatoes because the last time i made this sweet potato poriyal, Lil A loved it to bits.

So I was really hoping that she would enjoy a cup of pureed roasted sweet potato. But the little monkey proved me wrong. While she did enjoy the spicy curry, she was not even ready to take a whiff of the roasted sweet potato puree.

And I definitely did not want to waste that because i had taken the effort to prep my oven and roast it. And also because i was fasting that day and I needed some meal that would boost calories for me. That is exactly when this sweet potato smoothie bowl was born.

Ok, so not everyone blitzes up sweet potatoes into a smoothie, i admit. But i have come across recipes for sweet potato kheer. This is what became the inspiration behind this sweet potato smoothie bowl. I love roasted sweet potato more than the boiled version even though it takes more time.

But the wait is worth it because the flavors are so much better. I combined all things deemed healthy in this sweet potato smoothie bowl and notched up the health quotient one more mile up by topping it with berries, coco sugar and raw cacao nibs.

Raw cacao nibs are the purest form of chocolate. They are actually chocolate beans that are crushed to bite sized pieces and work wonderfully well in all things that require some chocolate. I used Almond milk to make this sweet potato smoothie bowl because i wanted some nuttiness in my smoothie.

Almond milk is a wonderful non dairy substitute that can add depth of flavor to any smoothie.

Like with any smoothie bowl, this sweet potato smoothie bowl too offers a myriad of options. You can use pretty much any fruit along with the roasted sweet potato but berries and grapes don’t work well. The best bets are orange, mangoes and banana. You can even add some roasted carrots to this to make it vibrant. The almond milk can be substituted with soy milk or any other milk of choice. I did not use any sweetener in this recipe but you may do so if required. My latest discovery in the smoothie bowl niche is the coconut sugar and i m pretty much using it in everything these days. It is such a revelation in terms of flavor, texture and feel when compared to the regular evil white sugar. You can also use canned sweet potato puree here but i would not recommend that unless you are really desperate. I suggest roasting the sweet potato previously and refrigerating it. ย And as always, the toppings are completely your choice. So, shall we check out how to make some sweet potato smoothie bowl?

  • Japanese sweet potato 1 largish
  • Chilled Almond milk 1 cup
  • Medjool dates 2 pitted
  • Banana 1 medium peeled and sliced
  • Cinnamon powder 1/2 tsp
  • Ginger powder 1/4 tsp
  • Turmeric powder 1/2 tsp
  • Flax meal powder 1 tbsp
  • Chia seeds 1 tbsp
  • Goji berries/ Wolf berries 1 tbsp
  • Raw cacao nibs 1 tbsp
  • Pumpkin seeds 1 tbsp
  • Sunflower seeds 1 tbsp
  • Coconut sugar 1 tbsp
  • Strawberry 1 sliced optional

Instructions

  • Preheat oven to 200 C.
  • Wash the sweet potato thoroughly, pat dry and slightly grease with any neutral flavored oil.
  • Wrap the sweet potato in foil and roast until tender for about 40 mins in the preheated oven.
  • Once done, let cool and peel.
  • Place the roasted sweet potato, banana, almond milk, dates, turmeric, ginger powder, cinnamon powder and flax meal in a high speed blender and blend till smooth.
  • Pour into a bowl.
  • Top with chia, pumpkin and sunflower seeds, goji berries, cacao nibs, strawberries and coconut sugar.
  • Serve immediately.

This one pot vegetable ramen with peanut butter sauce is something that i make when i m in no mood for extensive cooking. Besides the fact that it takes less than 2o mins to wing it off, this dish is a complete meal by itself because it is loaded with veggies, tofu and noodles. The dish is made in a sauce pan that is big enough to hold all this and that gorgeous peanut butter sauce that lends body to this otherwise watery ramen dish and rounds off the flavors well. This is the first time i tried my hands at using peanut butter in a savory dish. I have come across many savory recipes that call for peanut butter but have never really bothered much about it. And then one day, i felt like this delicious soupy one pot vegetable ramen with peanut butter goodness that is inspired from hereย . After all, there is really not much that peanut butter, chocolate and vodka cant fix ( in that order, by the way) in this world.

So, this dish is really forgiving but for the pan. You must use a pan that can hold all of this while the ramen cooks in that bubbling sauce for a good 5 mins. Apart from that, everything else is a cinch. You can any veggies you prefer but i really did keep this simple with just the basic stuff like bell peppers, carrots and zucchini. Baby corn would add a nice crunch and broccoli would lend a different flavor. I used some of that sriracha sauce i had made the other day along with a splash of red chili sauce but you can just limit that to the red chili sauce. There is really not much stirring required here and all you have to really do is put everything in a pan, mix lightly, bring the flame down to medium and turn away for a good 10 mins. And when you come back, your one pot vegetable ramen with peanut butter will be ready, hot and steaming.

  • Ramen noodles 1 small cake
  • Tofu 75 g chopped into cubes
  • Carrot 1 cut into julienne
  • 1/2 a Red yellow and green bell pepper each chopped into long strips
  • Mushrooms 5 to 6 sliced thinly
  • Red onion 1 chopped finely
  • Zucchini 1 smallish peeled and chopped into thin strips
  • Celery stick 1 small sliced thinly
  • Spring onion bulbs 2 chopped finely
  • Sriracha sauce 1 tbsp
  • Red chili sauce 2 tsp
  • Soy sauce 1 tbsp
  • Sugar 1 tsp
  • Peanut butter 1 tbsp
  • Garlic powder 1 tsp
  • Ginger 1/2 tsp grated
  • White pepper powder 1 tsp
  • Water 2 cups
  • Lemon juice 1 tbsp
  • Salt to taste
  • Coriander leaves for garnish.

Instructions

  • Place all the ingredients except the lemon juice, water and peanut butter in a heavy bottomed deep sauce pan.
  • Gently pour water over this.
  • Add salt and peanut butter.
  • Place the pan on medium flame and cook till the ramen noodles turn soft, stirring occasionally.
  • Once done, garnish with coriander leaves and add lemon juice.
  • Pour into soup bowls and serve piping hot.

Notes

1. You can use any nut butter in place of the peanut butter.
2. Adding sugar and lemon juice is optional but recommended.
3. Ramen can be replaced with angel hair pasta or brown rice noodles.

Before i tell you all what is this dragon fruit smoothie bowl, let me talk about a smoothie bowl first. Okay? So, this smoothie bowl is kind of a food trend that became viral somewhere by the beginning of 2014 on instagram. Suddenly it seemed like people were really just not content drinking a glass of smoothie. They wanted more. I really dont know who started it. But then it began and i must say it is such a brilliant idea. So what exactly is a smoothie bowl? Well, it is a really thick smoothie that is poured into a bowl and topped with your choice of fruits , nuts and seeds. The most common toppings are chia, pepita, sunflower seeds, nuts and sliced fruits. Many add berries for a splash of color. But the smoothie bowl has come a long way since then and nothing really surprises me if it is a smoothie bowl. People add everything that is considered a super food to their smoothie bowls and this falls between the ranges of spirulina powder to maca powder. The basic concept of a smoothie bowl is that you eat it with a spoon and not drink it with a straw. That is it. From there on, you can let your imagination go wild and experiment with a number of fruits and other ingredients. This dragon fruit smoothie bowl is my first smoothie bowl recipe here on the blog. I admit. I am a smoothie bowl addict. Because it is so convenient to just blitz up a couple of my favorite fruits in the blender, sprinkle whatever comes into my mind over the bowl of smoothie and begin digging in. Mr. P never eats breakfast at home and i m not a person who ll make the effort to make an elaborate breakfast for me. And so, smoothie bowls come to the rescue. So, we ll get on with our dragon fruit smoothie bowl here, shall we?

If you live in Asian countries, the chances are that you may have come across this beautiful fruit called dragon fruit. Dragon fruit is also called as Pitaya and is immensely popular in South East Asian countries. We get dragon fruits very easily here in Singapore and i m smitten by the purple color of the fruit. Psst.. purple and blue are my favorite colors after grey. Yes, i like grey. Now, stop staring! Back to the dragon fruit smoothie bowl. If you ask me to describe how a dragon fruit tastes, i would say it is rather tasteless and flavorless. But i love the texture of the fruit and the way it lends body to a smoothie. To this dragon fruit smoothie bowl, i added the flesh of one purple dragon fruit, one banana and some strawberries. I also used a variety of toppings including chia seeds and pepita. Instructions

  • In a blender, combine almond milk, banana, dragon fruit, strawberries, vanilla and lemon juice and blend till smooth.
  • Pour into a deep bowl.
  • Top with the sliced banana, strawberries, pepita, chia and sunflower seeds.

While you can enjoy this delicious dessert cold or warm, my bet is to eat it with warm with a dollop of vanilla or chocolate ice cream.There is really nothing better that goes with a good fruity dessert than some ice cream. I made about 4 portions of this crumble and we ate it over a span of three days. I must say this strawberry crumble can be made ahead and kept in the fridge because it keeps well for 3 days. This is a great party dessert and also is convenient for people who want to exercise portion controlย  ๐Ÿ˜› . I will not recommend using frozen strawberries to make this because the filling may make the whole thing unusually soggy. So try to get a bag of fresh strawberries to make this.

Ingredients

  • Strawberries 1 cup hulled and sliced
  • Sugar 2 tbsp
  • Corn flour 1/2 tsp
  • Lemon juice 1 tbsp
  • Vanilla 1 tsp
  • All purpose flour 1/3 c
  • Butter 25 g
  • Salt a pinch
  • Caster sugar 2. 5 tbsp

Instructions

  • Preheat oven to 180 C
  • Melt the butter in the microwave in a microwave safe bowl.
  • Add caster sugar, salt and flour to this and mix just to make a crumbly dough. This is our topping. Set aside.
  • In another bowl, combine strawberries, 2 tbsp sugar, lemon juice and vanilla.
  • Now, divide the strawberry mixture into 4 small ramekins. I used ramekins that are of 125 ml capacity.

Murungai Keerai Soup is not what you might have expected in Summer. After all, the title reads soup, doesnt it ? Well, there is a good reason why i chose to share this murungai keerai soup recipe now. This soup is more a medicine than a soup in a very general sense. The ingredients that go into the making of this soup have a specific nutritive value and healing properties which will help us during the hot summers.

Adding coconut milk to soup:

The authentic version of this murungai keerai soup involves adding freshly extracted coconut milk.ย  Coconut milk is the true essence of this soup. Apart from imparting a delicate flavor, it also cools down our bodies and heals stomach and mouth ulcers. To extract fresh coconut milk, combine 2 c tightly packed freshly grated coconut and a cup of warm water in a blender and grind to a paste. Run this through a sieve and collect the milk. This s the first milk. Repeat the same process once more by combining the grated coconut with warm water, grinding and running it through a sieve. This s the second milk. And this s what is used in this murungai keerai soup.

Is there a shortcut to this coconut milk extraction process?

Yes! I used canned thin coconut milk. Its very easy to find fresh pasteurised coconut milk in Singapore. I have used this only for making this soup. If you dont have access to thin coconut milk, then combine 1/2 c thick coconut milk with 1 to 2 c water and use it in the soup. Using coconut cream is not recommended in this recipe.

The moringa leaves used in this soup is rich in iron and helps one to relax. Shallots in general are eaten with porridges during summer for a cooling effect. This ย soup is tempered using sesame oil or nalla ennai for added nutrition. And finally the cumin and pepper corns aid in digestion which makes this soup a wholesome dish that is totally appropriate for Summer. And the good news is if you have the leaves picked and sorted, then this soup takes just 15 mins to put together.

Murungai Keerai Soup

Ingredients

  • 1 cup Murungai Keerai cleaned and tightly packed
  • 4 numbers Shallots peeled and minced
  • 2 numbers Garlic cloves crushed lightly
  • 1 small Tomato chopped finely
  • 1 number Green chili
  • 1 tsp Cumin seeds
  • 10 numbers Pepper corns crushed
  • 1 cup Thin coconut milk I used canned light coconut milk here
  • 1/2 tsp Turmeric powder
  • To taste Salt
  • 1 tbsp Sesame Oil/ Nalla Ennai Cold pressed coconut oil will also work

Instructions

  • Heat a pan with the sesame oil.
  • Add the shallots, green chili and garlic and fry till light brown.
  • Tip in the tomatoes and turmeric next and fry till tomatoes turn mushy.
  • Add the drumstick leaves and fry till wilted.
  • Now, add salt and 1/2 c of water and mix well.
  • To this add the thin coconut milk and simmer on low heat for about 3 mins.
  • Once done, sprinkle the cumin and pepper and mix well
  • Keep covered for 5 mins.
  • Once done, serve hot.ย

Chocolate Raspberry Banana Bread is an egg free quick bread that can be made in ten mins. Ok, it takes a while to bake. But i m just talking about the prep time here. Agreed? Good.ย ย So, this means this banana bread is a super quick snack and it doubles up as a breakfast on the go. Literally all over ripe bananas meet the fate of a banana bread or some nice cream in my house. I ll talk about nice cream some other day. You see, we cant discuss everything delicious in one single day. After all, you need to soak up the flavors of this chocolate raspberry banana bread. I never tag my recipes as healthy. But i ll make an exception in the case of this chocolate raspberry banana bread.

The second new ingredient that i tried this month is barley flour. I love barley. The grain is full of nutritive value and yet is so under utilized. Many people are under the notion that barley is meant for people who are recovering from illness. Let us not forget that barley is a great diuretic. While many Indians use pearl barley as a whole, very few people walk that extra mile to explore the goodness of barley flour. Barley flour is a wonderful substitute for regular flours in baking. Yes, it may call for a little more moisture because of its dense texture but nevertheless, it lends a rustic and an almost homey feel to your baked goodies. I used barley flour in place of the regular wheat and All purpose flour here in this chocolate raspberry banana bread and i must admit the flavor and the texture simply was wow. We did not miss anything and this made a fantastic breakfast for us for three days back to back. This recipe has been adapted fromย here. There are many things that i want to share before i begin writing the recipe for this chocolate banana raspberry bread. When i began baking, i forgot to bring out chocolate chips. When i had finished mixing the batter, i realised that the chocolate chips were not around. And i frantically searched for that bag of chips for nearly ten mins, all the while blaming Mr.P and Lil ย A for the prospective banana bread disaster in the eventuality that the bread does not get into the oven in the next ten mins. Sigh! But somehow those chips did not appear. They still have not appeared yet. And so, i used up my stash of Hershey’s chocolate nuggets in place of regular chocolate chips. And believe me, that is the best banana bread thing that ever happened to me. However, you are free to add whatever form of chocolate you choose. But please, let there be chocolate. I have used fresh raspberries here in this chocolate raspberry banana bread. Frozen may not work well. However you may use other types of berries like strawberries. Also, this banana bread does not have the regular sugar but uses coconut sugar instead. So, the result was this amazing dense, moist and rustic almost tropical chocolate raspberry banana bread. Use any non dairy milk and vegan chocolate to make this a vegan chocolate raspberry banana bread. This is my first attempt using flax eggs in baking. And i m absolutely charmed by the results! And now, because i believe that i have yapped enough about this banana bread, shall we check the recipe?

Chocolate Raspberry Banana Bread With Barley Flour

Ingredients

  • Barley flour 1 cup
  • Bananas 4 medium mashed with a fork
  • Flax meal 1 tbsp
  • Fresh thick yogurt 2 tbsp
  • Vanilla extract 1 tsp
  • Cinnamon powder 1/2 tsp
  • Water 3 tbsp
  • Baking soda 1/2 tsp
  • Baking powder 1/8 tsp
  • Coconut sugar 1/2 c
  • Raspberries 1/2 c
  • Canola oil 1/4 c
  • Hershey's chocolate nuggets 10 broken or
  • Chocolate chips 65g see notes

Instructions

  • Preheat oven to 180 C.
  • Grease two mini loaf pans with oil or butter. I used non stick pans for this.
  • Combine flour, baking soda, baking powder, cinnamon and salt in a bowl and mix well using a whisk.
  • Place the raspberries in this and toss well.
  • In another large mixing bowl, place the mashed banana, sugar, oil, yogurt and vanilla and mix well until you see no streaks of yogurt. I recommend using an electric whisk for this.
  • Mix 1 tbsp flax meal with 3 tbsp water using a whisk and add this to the banana mixture.
  • Mix well.
  • Now, add the flour and raspberries mixture to the wet mixture and fold in gently using a spatula until you see no more streaks of flour.
  • Add chocolate nuggets to the batter and mix well.
  • Pour the batter into the greased pans till 3/4th full.
  • Bake in the preheated oven for 30 mins or until a skewer inserted comes out clean. This will not take more than 35 mins.
  • Let cool completely once done.
  • Slice and serve.

Notes

1. You may use normal white sugar in place of coconut sugar. My bread is brown because of the sugar i have used.
2. If you choose to bake this as a single loaf in a regular 9" by 11" pan, this will take longer to bake, that is, anywhere between 40 to 50 mins. The bread may also brown too much if you bake it this way. I suggest covering the pan with foil after the 30 min mark if you choose to bake this in a large loaf pan.
3. Use 3 tbsp of any non dairy milk and 65g of vegan chocolate chips to make this a vegan bread.
4. I insist on tossing the raspberries in the flour to prevent them from sinking.

Strawberry salsa is an addictive way to eat fresh strawberries. I have made the regular tomato salsa only once in my entire lifetime. Wonder why? Because the second time, i made this ย salsa and i have never made tomato salsa after that. The strawberry does wonders to this salsa ย because of its tangy notes. The flavors complement the heat of the jalapeno and rounds off the sharp taste of the red onions. In my house, we don’t wait to eat strawberry salsa with tacos. We just grab a spoon and begin scooping away as soon as it is made. Of course, this salsa tastes best when servedย fresh although we like it cold.. And needless to say, this makes a great pair with tortilla chips. So, the next time you want to up your salsa game, then you must absolutely make this totally awesome salsa.

  • Yellow sweet pepper 1 chopped finely
  • Jalapeno pepper 1 minced finely
  • Red onion 1 small peeled and chopped finely
  • Coriander/ cilantro 1 tbsp chopped finely

  • Lime juice 1 tbsp

No bake strawberry cheesecake is a delicious dessert that can be made in small jars and served easily. When i first heard of a cheesecake, i was not impressed. Honestly. I could not come to terms with something salty like cheese in a cake but little did i know back then that cream cheese is not salty and that a cheesecake translates literally to heaven in the world of foodie folks like me. I had my first taste of a no bake strawberry cheesecake while in college. I liked it but i did not fall in love with it. There is a difference between liking and loving, right? Right. So, how did i fall in love with this no bake strawberry
cheesecake. I have no clue. But suddenly one day, i craved a cheesecake and i knew it had to have strawberries in them. And from there on, i have not looked back at my no bake strawberry cheesecake journey.

This no bake strawberry cheesecake is a combination of delicious things like strawberries, cream, cream cheese and a cookie crust that is assembled in a jar. I wanted to make a mini cheesecake this time and so i used my dessert ring to make a mini no bake strawberry cheesecake. I have included the pictures to show how a mini no bake strawberry cheesecake is done. In case you dont have a dessert ring, use any cookie cutter that is deep enough to create the layers. And make sure you use a firm flat plate to make the mini cheesecake version. This recipe calls for agar agar, a vegetarian version of gelatin. However, you can use gelatin in place of the same and achieve the same results. However, if you choose to use gelatin, please use only 3/4 tsp of gelatin for this recipe. Shall we now check how to make no bake strawberry cheesecake recipe step by step?

Step By Step Instructions ย For No Bake Strawberry Cheesecake Recipe

Assemble all the ingredients- Biscuits or cookies of choice for the crust ( I used oreo here and scooped out the cream in between. I needed about 12 biscuits here.), cream cheese, butter, sugar, etc. Wash the strawberries in water and hull them. Set aside.

Melt butter in the microwave. In a blender, add the cookies and sugar and blend to a slightly coarse powder.

Transfer the powdered cookie mix to a bowl and add the melted butter to this. Mix until crumbly. This is going to be our crust for the no bake strawberry cheesecake.

To make the mini cheesecake, take a flat plate and place the dessert ring in the center. Holding the ring with one hand, place about 2 tbsp of the cookie mixture at the base of the ring and press down firmly using a spoon. Place this in the fridge for 15 mins to firm up. To make the cheesecake in a jar, place 2 tbsp of the cookie mixture on to the bottom of the jar and press firmly using a spoon. Refrigerate for 10 to 15 mins to set.

While the crust is getting done, let s make our cheesecake filling. Place the strawberries , sugar,vanilla and cream cheese in a blender and blend till smooth. Add the full cream next to the mixture and blend again to a smooth puree.

In a bowl, combine the agar agar and 1 tbsp water until smooth. Add this to the blender along with strawberry cream cheese mixture and blend well.

Once done, remove the firmed up cookie crust jars and dessert ring from the fridge and pour the cheesecake filling till 3/4th full in the ring and the jar. I made 3 cheesecake jars and one mini cheesecake with the amount of filling and cookie crust mentioned here. Once done, place the filled up jars and the mini cheesecake in the fridge for 6 hours to set completely. I placed my mini cheesecake in freezer for about 20 mins before i removed it from the mould. You can also do the same.

Ingredients

  • Oreo cookies 12
  • Butter 2 tbsp melted
  • Sugar 1/2 c plus 1/4 cup
  • Cream cheese 1/2 package or about 130 g
  • Full cream 120 g
  • Vanilla extract 1 tsp
  • Strawberries 15 to 17 hulled
  • Agar agar powder 1.5 tsp
  • Water 1 tbsp
  • Dessert ring 1 for mini cheesecake
  • Glass jars to assemble the cheesecake

Instructions

  • Place the oreo cookies and 1/4 sugar in a blender and blend to a powder.
  • Add melted butter to this and mix until crumbly.
  • Place 2 tbsp of this crumbly cookie mixture in the bottom of the glass jars and press down firmly with a spoon.
  • Place in the fridge for 15 mins.
  • In the meanwhile, combine strawberries, cream cheese, sugar and vanilla in a blender and blend till smooth.
  • To this, add the cream and blend again.
  • Combine 1.5 tsp agar and 1 tbsp cold water and mix well.
  • Add this to the cream cheese and strawberry mixture and mix well.
  • Take the jars with the set cookie crust and pour the filling into the jars until 3/4 th full.
  • Place the jars in the fridge for 6 hours to set completely.
  • To make a mini cheesecake, place a dessert ring on a flat plate.
  • Holding the ring firmly. spoon 2 tbsp cookie mixture into the ring and press down with a spoon.
  • Set in the fridge for 15 till firm.
  • Once done, pour cheesecake filling into the ring until 3/4th full.
  • Place the ring in the fridge for 6 hours to set completely.
  • Stick the mini cheesecake in the freezer for 15 mins before serving.

Notes

Oreo cookies can be substituted with any cookies or biscuits of your choice.
I removed the filling in the cookies for this.
Frozen strawberries work well here.

Mango Passion Fruit Iced Tea is a delicious and healthy way to enjoy a tall glass of iced tea without the worries of added sugar and such. It is the season of mangoes, no secret there! But passion fruit is another story. I first had a taste of passion fruit when i was honeymooning. And it was instant passion fruit love. But i never had the fortune to eat them after that until i moved to Singapore. Passion fruit is as ubiquitous in Singapore as an apple is, anywhere else in the world. While we like enjoying the fruit as it is, i decided to make this refreshing mango passion fruit iced tea on a whim.

We are tea addicts here in the Praveen household. We love tea in all its forms ranging from the everyday Indian masala chai to the Oolong and the white tea. So, i stock up different flavors of tea in my pantry but green tea is always a staple. It is what i reach for when i m extremely sleepy or when i really need to perk myself up on a morning. This mango passion fruit iced tea uses freshly brewed green tea that is chilled and then made into a delicious iced tea replete with mango and passion fruit flavors. I have not used any sweetener in this mango passion fruit iced tea because the mango as such was sweet. In case, the mangoes you use are not that sweet, use any sweetener of your choice. Most passion fruit tea recipes use passion fruit flavor tea bags but this mango passion fruit iced tea uses fresh passion fruit pulp. So, how does this passion fruit taste? Well, it tastes tart and sweet and pairs really well with tropical fruits such as mango and pineapple. I also make passion fruit curd. I hope i share the recipe for that too soon.If you do not have access to fresh passion fruit, you can skip it and make only mango iced tea which also tastes equally delicious. Ingredients

  • Mango 1/2 c cubed
  • Passion fruit pulp from 2 passion fruits
  • Green tea bags 4 -5
  • Water 2 cups
  • Ice cubes to serve
  • Lemon wedges to serve

Instructions

  • Heat the water till it begins to boil.
  • Place the tea bags in the water and let it brew for about 10 mins.
  • After 10 mins, discard the bags and let the tea cool completely.
  • Once cool, place mango cubes and passion fruit pulp in a blender with about 1/4 c of water and blend to a smooth puree
  • Combine this puree along with the brewed and cooled tea and let chill in the fridge for 6 to 7 hours.
  • Once cold, serve chilled over ice cubes.

Notes

1. I have used Japanese Sencha blend green tea for this recipe. But any green tea will work well. In case you dont have tea bags but you have loose tealeaves, then add 1 tbsp of green tea leaves to the amount of water mentioned.

We used to have a big spread for breakfast while we were in India because back then, everything was slower and easier. But ever since we moved here to Singapore, life has become unusually fast and daily chores are proving to be a challenge as Lil A seems to grow taller on the naughtiness scale everyday. Even as i write this post on Berry Swirl Chia Pudding With Granola, she is right beside me, trying to scroll down the screen and see what best she can do in terms of watching some more You Tube. So, we have become breakfast on the go people. I make my breakfast the previous night and let it sit in the fridge and my favorite breakfast in a jar option is always this berry swirl chia pudding with granola.

As much as i love the patterns in this breakfast jar of berry swirl chia pudding with granola, i also love the fact that it is a very balanced diet in terms of nutrition, it is vegan, paleo and can also be eaten on days when you fast. Like i had mentioned in my previous post on the thai style quinoa salad, i have decided to pick one new ingredient every month and experiment with it. I must admit that chia seeds are addictive and make a delicious breakfast pudding when mixed with any dairy or non dairy milk of your choice. This berry swirl chia pudding uses almond milk. This pudding is a layered pudding that i made in a jar. However you can make the same by placing all of the ingredients in a bowl and giving it a nice swirl. I m sure you will have a beautiful and healthy bowl of berry swirl chia pudding with granola.

For making this berry swirl chia pudding i used my microwave berry compote and chocolate almond chia granola as a base and created layers. You can use pretty much any fruit jelly or sauce in place of the compote. Or if you want to make your breakfast totally cheerful, add some mango puree or if you want to be a teeny weeny bit wicked, use some chocolate sauce. The same applies for granola too. You can even use the regular breakfast cereals. Whichever way you decide to make this berry swirl chia pudding with granola, i m sure you will not be disappointed.

Berry Swirl Chia Pudding With Granola

Ingredients

  • Chia seeds 3 tbsp
  • Vanilla flavored unsweetened almond milk 1/3 cup
  • Berry compote 2 tbsp see notes
  • Chocolate allmond chia granola 2 tbsp see notes

Instructions

  • In a bowl, combine chia seeds and almond milk and let it rest in the fridge overnight.
  • The next morning, in a 300 ml jar, place the granola at the bottom and spread to make an even layer.
  • Spoon the berry compote over the granola.
  • Now add the soaked up chia pudding over the berry compote.
  • Swirl the compote lightly with a chopstick or a spoon.
  • Enjoy immediately.

Notes

1. The recipe links to the berry compote and the granola can be found in the post content.
2. You may use any non dairy milk of your choice but i find that coconut and almond milk work best for this chia pudding.
3. I like soaking my chia seeds longer as i find that it improves the texture. If you dont have the time, even three hours of soaking will suffice.
4. Use a splash of vanilla extract if you are using plain unflavored almond milk.

Turia Nu Shaak or Turai nu Shaak is a gourd lover’s delight. It is a simple yet flavorsome subzi that complements the everyday roti very well. Shaak in Gujarati is ย nothing but subji or vegetable that is served along with rotis. Having lived in Vadodara for over 5 years, i must admit that i have developed a liking towards their food that is always laced with a hint of sweetness just like the people living there too. If you happen to visit a Gujarati household during lunch time, you can see that the platter is quite extensive and it always has two subzis and one dal. One subzi they serve is always a shaak of some type.

We used to visit a restaurant called Mandap in Vadodara. It was a fine dining restaurant that served an all you can eat buffet every single day. The menu had about 12 dishes and a choice of 3 desserts. The best part of the platter was their farsaan which in Gujarati means dry food like samosa, kachori or khaman. On one such occasion , i happened to eat this Turia nu shaak as a part of the meal there. It was my husband who actually tried it first. I was as usual munching my way through the Farsaan. After having tasted the turia nu shaak, he was really impressed with the taste because it had very minimal spices and yet packed a punch in terms of flavor. So, he nudged me to taste the turia nu shaak just to get an idea about how it is made. Surprisingly, i also loved the simple sweetish mildly spicy shaak and the turai provided a nice texture to the curry. I immediately asked a couple of my Gujarati friends for the recipe and even made a note. But then, we had to shift base and the turia nu shaak was completely forgotten. It is only after coming to Singapore that i remembered the recipe for this turia nu shaak when i saw that the Chinese Okra or the Ridge Gourd was available in abundance here. The traditional recipe for this turia nu shaak uses the smooth gourd which is called Turai or Turia. But i have used the ridge gourd in place of this because i have seen many Gujaratis make the curry this way too. The addition of sugar to this curry is optional but highly recommended.

Ingredients

  • Ridge gourd 1 largish peeled and cubed
  • Tomatoes 2 small chopped finely
  • Garlic cloves 2 crushed along with the peel
  • Cumin seeds 1 tsp
  • Coriander cumin powder 1 tsp
  • Red chili powder 1 tsp
  • Turmeric powder 1/2 tsp
  • Sugar a large pinch
  • Salt to taste
  • Oil 2 tsp
  • Coriander leaves for garnish.

Instructions

  • Heat oil in a pan and crackle the cumin.
  • Add garlic cloves and tomatoes.
  • At this stage, add coriander cumin powder, red chili powder and turmeric powder and mix well.
  • Cook till tomatoes turn mushy.
  • Once done, add chopped ridge gourd and saute till the ridge gourd begins to wilt.
  • Add salt, sugar if using and 3/4 cup of water and simmer for five mins on medium flame
  • Garnish with coriander leaves.
  • Serve hot with rotis.

Notes

1. You can also use smooth gourd in place of ridge gourd in this curry.
2. Addition of sugar is optional but highly recommended.
3. Frozen ridge gourd will also work well in this.

To begin with, this smoothie is vegan and does not have any banana. Yes, you heard me right! Not every smoothie has to have banana. And it doesn’t have Kale either. That s another green smoothie myth busted. My Pear arugula and avocado green smoothie gets the green from the arugula, the body from the avocado, the fibre and sweetness from the pear and the almost liquid consistency from tender coconut water. I added a dash of lime juice to add some zest and also to help maintain the green color of the smoothie. You can make this Pear Arugula and Avocado green smoothie the day before and chill it. It will be all nice and ready the next morning to gulp down for breakfast. The combinations and permutations to make this healthy Pear Arugula and Avocado green smoothie are endless. You can use an orange in place of the lime. A regular lemon will work too. Almost any pear except the Asian pear will work in this smoothie. Also, if you insist, then you can add kale instead of Arugula. But believe me, the arugula does wonders to this green smoothie. Chettinad Avarakkai Poriyal is a simple no fuss stir fry made with Indian broad beans, garlic and homemade sambar powder.ย This semi dry curry which is vegan and gluten free tastes great with rasam and rice and even goes well with roti. While i usually make this no onion no garlic avarakkai poriyal,ย this chettinad style avarakkai poriyal is reserved for days when i have not made any kuzhambu and the meal will only be a simple thugayal, rasam, curry and rice. This poriyal is very forgiving and the true essence of it lies in the tempering. I picked up this version from my mom’s neighbor who is fondly known as aachi in our neighborhood. I wont be exaggerating when i say that i have learnt most chettinad style recipes from her and that she is an accomplished cook who makes the best vella paniyaram.

Coming back to this Chettinad Avarakkai Poriyal, i have used sambar powder but you may use kuzhambu thool or kuzhambu powder if you have some. The garlic is optional but highly recommended. I made this curry with small Indian broad beans called as papdi, which was the only version of avarakkai that i could source while i lived in Vadodara. But if you are lucky, use the south Indian avarakkai which are really broad and make sure you tear them up into bits after removing the stalks for this chettinad avarakkai poriyal.

  • Avarakkai Indian broad beans 20 stalks removed, stemmed and cut into small pieces.
  • Garlic cloves 3 to 4 crushed along with peel
  • Fennel seeds 1 tsp
  • Mustard seeds 1 tsp
  • Urad dal 1 tsp
  • Curry leaves a sprig
  • Sambar powder 1 tsp
  • Dry red chili 1 torn
  • Turmeric powder 1/2 tsp
  • Salt to taste
  • Oil 2 tsp

Instructions

  • Place the chopped beans in the microwave along with 2 cups of water and cook till fork tender.
  • This takes 7 to 8 mins on high.
  • Once done, remove and drain the water completely.
  • Heat a pan with oil and pop the mustard seeds.
  • Tip in the urad dal, fennel seeds, garlic and dry red chili along with the curry leaves.
  • Add the turmeric powder once the garlic begins to brown.
  • Now, add the cooked beans and salt and mix well.
  • Serve hot with rice and rasam

This Kuzhambu is a delicious and tangy kuzhambu that is rich in medicinal properties. Narthangai called as Kaffir Limes in English is very popular in Thai cooking too. When I came to Singapore, i was delighted to find an abundant supply of Narthangai and Narthangai Elai. I came across the recipe for this Narthangai Kuzhambu in a small cook book that my dad bought me years ago. And i must admit that the recipe for this Narthangai kuzhambu is a treasure.

While one can find lime leaves easily in fresh vegetable stores in Singapore, the limes are found only in flower shops and they are quite pricey. I happened to find a good haul of Narthangai a few weeks back for a reasonable price and picked up a few of them. Initially, I thought of making a very small batch of narthangai pickle but then this kuzhambu tempted me and so I decided that it had to be Narthangai kuzhambu with the batch of limes that i had bought.

Benefits of Narthangai

Narthangai is known for its digestive properties and helps fight nausea. It is for this reason that uppu narthangai or kaffir limes cured in salt is given to pregnant women and people who have food poisoning or gastric ailments. This kuzhambu tastes delicious the next day and is best eaten with hot rice and a generous drizzle of sesame oil.

The kaffir limes have a mild bitterness and so to balance that, i have added jaggery. I recommend making this kuzhambu in sesame oil or nalla ennai as it brings out the best flavors. This kuzhambu keeps well for three days at room temperature and for a week in the fridge. I also recommend serving this kuzhambu along with rice and a mild curry like this Avarakkai Curryย orย Beans Paruppu Usili.

Variations

If you cannot source Narthangai, you can also use lemons to make the same kuzhambu.

Ingredients

  • Narthangai Kaffir Limes 1 medium cut into 8 pieces
  • Tamarind a small marble sized soaked in warm water for 20 mins
  • Sesame oil 2 tbsp plus 1.5 tbsp
  • Mustard seeds 1 tsp
  • Urad dal 1 tsp
  • Curry leaves a sprig
  • Hing a small pinch
  • Turmeric powder a small pinch
  • Jaggery 1.5 tbsp powdered
  • Green chili 1 slit lengthwise
  • Salt to taste
  • For The Spice Powder
  • Toor dal 1 tbsp
  • Coriander seeds 1 tbsp
  • Fenugreek seeds 1 tsp
  • Mustard seeds 1 tsp
  • Dry red chilies 2 to 3

Instructions

  • Mash the tamarind using your hands along with the warm water and strain this liquid. You will have a thick tamarind extract.
  • Add 1 cup of water to this and set aside.
  • Heat a pan with 1 tsp sesame oil.
  • Roast the toor dal, coriander seeds, fenugreek seeds, mustard seeds and dry red chilies separately in the same pan beginning with the toor dal and continuing in that order.
  • Remove from pan and Set aside to cool.
  • In the same pan, heat the remaining oil and add the chopped lime.
  • Saute till limes turn a light brown.
  • Add the tamarind extract, salt, turmeric powder and jaggery and simmer till raw smell of the tamarind goes away.This takes about 6 to 7 mins.
  • While this is simmering, grind the roasted spices to a smooth powder in a blender and set aside.
  • Once the raw smell of the tamarind goes away, bring down the flame to the lowest and add the ground powder.
  • Mix well using a whisk.
  • Continue to simmer for about 5 mins until oil begins to leave the sides.
  • Heat 1.5 tbsp of sesame oil in small pan.
  • Pop the mustard seeds and add urad dal, curry leaves, green chili and hing.
  • Once the dal turns a light brown, add the tempering to the kuzhambu and mix well.
  • Serve hot with rice and any dry curry of your choice.

Chocolate Almond Chia Granola is my go to breakfast these days. Add some cold milk, slice up a fruit and scoop up some of this chocolate almond chia granola and my day looks brighter than it just did when i woke up. Why? Because this has chocolate and almonds and chia and old fashioned rolled oats. But mainly because it has chocolate and almonds. The almond is the single most liked food in the Praveen household. We are hungry, we reach for a fistful of almonds. Want a snack, then pop some almonds in the microwave, toast them all up and begin munching. That is how much we love almonds. Back to the chocolate almond chia granola, Mr.P doesn’t eat a big breakfast these days. He carries a light sandwich mostly. So i make a batch of granola to tide me over in the mornings. My breakfast is usually very late, say around ten in the morning. So i prefer a breakfast that is not too tedious to make and yet something that will keep me going till late in the afternoon. That is probably why granola is my favorite breakfast these days.

While i do love the traditional granola recipes, i wanted something chocolate a while back. And i decided to just combine all my favorite breakfast things in one recipe starting from the old fashioned oats to maple syrup. This chocolate almond chia granola uses coconut oil. It is sugar free and has maple syrup for a sweetener. In case you dont have access to maple syrup, feel free to use honey or golden syrup. I used Hershey’s dark cocoa here but i believe any unsweetened cocoa should work like a charm here. You can pretty much add or subtract almonds or chia in this recipe and replace it with nuts and seeds of your choice. This chocolate almond chia granola is a vegan recipe and keeps well in an airtight container for about 10 days.

Ingredients

  • Old fashioned rolled oats 1 cup
  • Almonds 1/4 cup
  • Chia seeds 2 tbsp
  • Pepita Pumpkin seeds 2 tbsp
  • Maple syrup 2 tbsp
  • Coconut oil melted 2 tbsp
  • Cocoa powder 2 tbsp

Instructions

  • Preheat oven to 200 C.
  • In a large mixing bowl, combine maple syrup, coconut oil and cocoa. Whisk well.
  • Add the remaining ingredients to the bowl and gently toss making sure that the oats and nuts are well coated with the cocoa mixture.
  • Spread on a baking tray evenly, breaking down clusters with a spatula or spoon.
  • Bake in the preheated oven for 10 mins.
  • After 10 mins, toss the granola around, spread evenly and continue to bake for another 10 mins.
  • Let cool completely.
  • Store in an air tight container and use as required

Ingredients

  • Strawberries 15 hulled
  • Blueberries 1/2 cup
  • Raspberries 1/2 cup
  • Icing sugar 2 tbsp
  • Lemon juice 1 tbsp

Instructions

  • Wash the berries and drain completely.
  • Let them air dry for a couple of minutes
  • Combine all the ingredients in a large microwave safe glass bowl.
  • Place in the microwave and cook on high for a minute.
  • After a min, remove and give the compote a stir.
  • Cook again on high in the microwave for 1 min or until sauce begins to bubble.
  • Remove and stir.
  • Return to the microwave and cook for another 45 secs on high.
  • Remove and let cool completely.
  • Transfer to an air tight container and refrigerate.
  • Use as required.

Panakam Gelato- yes you read it right. I made a Panakam flavored gelato from the scratch. And the good news is this Panakam Gelato does not require any ice cream machine and is egg free. But before i tell you how the panakam gelato happened, let me talk a little on Gelato. So, what is the basic difference between an ice cream and a gelato? An ice cream is a frozen dessert that is served in scoops and is slightly harder than a gelato. But a Gelato, Italian in origin, is a soft serve frozen dessert with lesser fat and frozen at a lesser temperature. Now that i have this Gelato trivia cleared, let me come back to the no churn no eggs Panakam Gelato. I was trying to put Lil A to sleep four nights ago. It was one in the morning when she finally fell asleep. But insomnia struck me and my thoughts wandered far and yonder. Suddenly it dawned on me that the 15th of this month is Ram Navami and we usually make panakam and kosambariย for the occasion. I knew that moment that i wanted to make something different yet fitting for the day of Ram Navami. Then the brainwave came. I initially thought of making a granitaย or even a sorbet using panakam. But then, i decided that i needed some dairy to cheer me up.

So it had to be a panakam gelato. Now, you may ask why not an ice cream and why a gelato? Well, i was really not sure if the jaggery i use in this recipe will give me a smooth, creamy yet firm ice cream. Also, this no churn Panakam gelato doesnt need much blending like our regular ice creams. So, my hunch was right. I made luscious creamy and dense gelato flavored with the goodness of Panakam and i must say, it was mouth watering and well worth the effort. I believe we may never go back to eating store bought frozen desserts after this. Shall we now check how to make panakam gelato step by step?

Step By Step Instructions On How To Make Panakam Gelato

In a pan, combine cream ( I used nestle), milk and condensed milk in that order. Heat the pan on medium flame. Stir the mixture continuously until well emulsified.

Now at this stage, add jaggery and sugar and continue to whisk the mixture until the sugar and jaggery dissolves completely.

Turn the flame to the lowest possible now. In a bowl combine 2 tsp of corn flour with 1.5 tbsp water and mix thoroughly. Add this to the pan and whisk well. You can see that the mixture begins to thicken visibly.

Once the mixture begins to bubble and has thickened considerably, add the powdered ginger, pepper, nutmeg and holy basil leaves and whisk well. Cook further on medium flame for 5 mins.

Once done, let the mixture cool completely. When the mixture has cooled down completely, squeeze lemon juice to it and mix well. ย It is important that you let the mixture cool completely before adding the lemon juice. If you add the lemon juice while it s hot or warm, the mixture turn bitter or curdle.Pour into a freezer safe dish and freeze till set.

Once set, remove the gelato and place in a blender and blend till smooth. Pour this blended mixture back into the container and freeze till completely frozen. Once frozen, scoop and serve.

Ingredients

  • Cream 170 g
  • Condensed milk 1/3 cup
  • Full fat milk 125 ml
  • Sugar 1/4 c
  • Jaggery 1/4 c
  • Nutmeg powder 1 tsp
  • Dry ginger powder 1 tsp
  • Black pepper powder 1 tsp
  • Edible camphor a pinch optional
  • Tulasi /Holy basil leaves 10
  • Lemon juice 2 to 3 tbsp
  • Corn starch 2 tsp
  • Water 1.5 tbsp

Instructions

  • Combine cream, milk and condensed milk in a pan and cook till combined on medium flame.
  • Add jaggery and sugar to this and cook further till the sugar and jaggery dissolve completely.
  • Turn down the flame to low
  • Once done, mix corn starch with water and add this to the pan.
  • You can see the mixture thicken visibly.
  • Continue to cook the mixture further till bubbly and it thickens to the consistency of porridge.
  • Now add the ginger, pepper, nutmeg and basil leaves.
  • Mix well.
  • Cook further for 5 mins.
  • Once done, let cool completely.
  • When cooled down fully, add lemon juice and mix well.
  • Pour into a freezer safe container and freeze till set.
  • When set, remove from container and place the gelato in a blender.
  • Blend till smooth.
  • Pour the mixture back to the container and freeze till completely frozen.
  • Once done, scoop and serve.

Kadale Bele kosambari is a light salad that uses chickpea lentils, green chilies and coconut. Many people add cucumber to this but i like adding cucumber only to my hesarubele kosambari. I love eating kosambari. For the uninitiated, kosambari is a combination of soaked lentils, coconut and a vegetable which is usually a carrot or cucumber. This is then seasoned with salt, green chilies and lemon juice and tempered with mustard seeds. The Madhwa cuisine is very specific when it comes to food. We have a separate set of dishes for each occasion. For instance, we do not make urad dal vada on festive occasions. Instead, we make paruppu vadai or ambode or aama vadai as you all know it. Similarly, cooked moong dal is not used in any dishes that is served on festivals. But soaked moong dal in kosambari is accepted. It is because of these traditions that i do not make dishes like suhiyan or adhirasam at home. That my parents indulged me in adhirasams that were bought from outside is a different story altogether. Anyway, coming back to the kadale bele kosambari, the dish itself is a protein packed recipe that uses all things good provided by Mother Nature. This kadale bele kosambari is something that we make on the occasion of Ram Navami apart from all other festive occasions including marriages. Usually the kadale bele kosambari occupies the third place starting from the top left on the upper portion of a plantain leaf. Yes, we have specific place settings for each dish, too. This is one of the reasons why i m proud of my heritage. And i guess that is where i have learnt the most important principle from – “A place for everything. Everything in its place.”ย And so, with that said and done, let me share this ridiculously simple yet divine recipe for kadale bele kosambari.

Ingredients

  • Channa dal/ Chickpea lentils/ Kadale Bele 1/4 c
  • Freshly grated coconut 1 tbsp
  • Green chilies 2 small chopped finely
  • Lemon juice 2 tsp
  • Salt to taste
  • Mustard seeds 1 tsp
  • Hing a small pinch
  • Oil 1 tsp

Instructions

  • Soak the dal in 3/4 cup of water for an hour.
  • Drain completely.
  • Add salt, lemon juice, green chilies and the coconut to the drained dal.
  • Heat a pan with oil and pop the mustard seeds and add the hing.
  • Add this to the dal mixture and mix well.
  • Mix well.
  • Serve cold or immediately.

What is Poriyal?

“Poriyal” in Tamil loosely refers to something fried. Technically, this dish means a stir fry. In many Tamil homes, we make a vegetable stir fry to be served with lunch.

Usually, one vegetable or a combination of veggies are used for making Poriyal. There is more than one way to make this ubiquitous yet satisfying dish.

This recipe features a combination of carrots and green beans. Traditionally, both the veggies are cooked till par-boiled and then tossed with some basic spices.

In this post, I will share how to make this easy dish on the stovetop and using the Instant Pot pressure cooker.

Ingredients

  • Carrots – For this recipe, we need to dice the carrots.
  • Green beans- Pick tender green beans for this dish. Yard long beans will not work the same way here. 
  • Coconut oil or any neutral flavored vegetable oil will work.
  • Mustard seeds- the most basic tempering spice used in South Indian tempering.
  • Broken or whole white Ural dal 
  • Dry red chilis
  • Curry leaves
  • Salt to taste
  • Grated or shredded fresh coconut- You can also use frozen shredded coconut or desiccated coconut. Please read recipe notes.

Variations

  • Other vegetables that you can use with this are fresh green peas, shredded cabbage, diced turnips, kohlrabi and parsnips.
  • Grind grated fresh coconut, 1/2 tsp cumin seeds and 1 green chili to a coarse paste and use this in place of the grated fresh coconut for a more flavorful version. When using this, skip the dry red chilis in the tempering.
  • Sometimes, I add chopped onions to this Poriyal too. If you wish to do this, then add the chopped onions right after the urad dal begins to brown and saute the onions till pink and soft. Proceed with the rest of the recipe as given.
  • For a vivid and attractive color, add 1/2 tsp turmeric powder to the vegetables along with the tempering.

Recipe Notes

  • I do not recommend pressure cooking the carrots and beans in a stove top pressure cooker. Invariably, this results in overcooked vegetables. For this dish, we need the veggies to be cooked with a crunch.
  • I add the water that I use to cook the carrots and beans to my Dal and Rasam. This is a great way to use up this water. Alternatively, you can add it to your stock too.
  • You can also cook the beans and carrots in the microwave on high power for 3 to 4 mins.
  • Keep an eye on the tempering and do this step only on low flame to prevent the mustard seeds, red chili and urad dal from burning.
  • Add the coconut only towards the end. We want the coconut to retain its fresh and sweetish taste. When we add it at the beginning, the coconut loses its freshness.
  • If you do not have access to grated fresh coconut, used frozen shredded fresh coconut or unsweetened desiccated coconut.
  • Find unsweetened desiccated coconut or frozen grated fresh coconut in Asian stores or at Indian grocers.
  • Thaw frozen shredded fresh coconut before using for best results.

Serving suggestions

While my favorite way to enjoy this simple stir fry is to pair it with hot rice and tomato Rasam, you can also serve this with plain Chapatis, variety rice like tamarind rice.

This Poriyal is also great with tangy and spicy Kuzhambu (gravy) varieties like Vatha Kuzhambu and Dhania Kuzhambu.

Method

Prep work

Peel and dice your carrots into small cubes. String your green beans and chop them into small bits.

Try and keep the size of the carrots and beans equal. This helps in even and quick cooking.

To a pan, add the chopped carrots and beans.

Add 1.5 cups water and cook this on medium flame until both are cooked but have a bite to them. This takes roughly 5 to 7 minutes.

Drain the cooked beans and carrots in a colander. Reserve the water and use it to cook Dal or soups.

Heat a saute pan with coconut oil. Turn the flame to low, add the mustard seeds.

When the mustard seeds begin to splutter, add the Urad dal and dry red chilis.

Once the dal begins to brown, add the cooked carrot and beans along with curry leaves.

Now, add salt and mix everything well.

Switch off the flame and add the coconut. Stir to combine so that the coconut is evenly distributed through the Poriyal.

Rainbow Fruit Salad with Citrus Mint Dressing is an easy fruit salad that can be made with any combination of fruits including berries. The salad uses a citrus mint dressing which only has three ingredients and is a breeze to whip up. This rainbow fruit salad which is colorful and bright is a kids’ delight. This salad is also appropriate during this Navratri time and makes a filling meal on hot days too.

I sometimes go overboard when i go fruit shopping. And this rainbow fruit salad happens when i m left with too many fruits but too few smoothies or milkshakes to make. I used a very simply citrus dressing to make this colorful salad as i wanted to enjoy the flavors of the fruit without any other flavors interfering with the real taste of the fruits. I seem to be making too many salads these days because Mr.P carries salads along with his regular lunch. It is just that there is really very little time to share those salads here but i will still make an attempt. This salad tastes best when eaten cold. And it also works as a great dessert in case you are pressed for time. Just add some frozen yogurt or ice cream with a bowl of this rainbow fruit salad and your dessert is ready. Of course, it wont be vegan then.

  • Mixed fruits 1.5 c Kiwi, Banana, Apple, Pine Apple, Orange,Pear, Strawberry, Grapes and Assorted Berries used here
  • For The Citrus Mint Dressing
  • Orange juice 2 tbsp
  • Lime juice 1 tsp
  • Lemon juice 2 tsp
  • Maple syrup or white sugar 2 tbsp
  • Mint leaves 5 to 6 chopped finely
  • Mint leaves for garnish

Instructions

  • To make the dressing, combine the maple syrup, orange juice, lemon juice and lime juice along with the chopped mint leaves and whisk thorougly.
  • Once done, add the dressing to the fruits and chill for an hour in the fridge.
  • Garnish with mint leaves and serve.

Notes

1. If you do not have access to maple syrup, use white sugar or honey. But if you use honey, then the recipe wont be vegan

Arisi Thengai Payasam is a kheer or payasam (as it is called in tamil) prepared with freshly grated coconut, jaggery and rice. This payasam involves soaking the rice and grinding it along with fresh grated coconut which is then cooked on low flame along with jaggery. I have a thing for desserts that have jaggery as the sweetener. And it is no surprise that this payasam tops the list of my favorite desserts. Besides the fact that the arisi thengai payasam is a jaggery based dish, i also love that it incorporates freshly grated coconut which is great for summer related ailments. Coconut in general cools down the body. This Arisi Thengai Payasam is a great choice for beginners who want to make a fine dessert with minimal effort involved. The only tricky part in making this payasam is that the coconut rice paste may become lumpy if it is not stirred gently using a whisk. But for that, making this Arisi Thengai Payasam is a cinch.

This payasam will make a great dessert to make on the coming Tamil New Year’s day. It tastes great both warm and cold, although my preference is to enjoy the Arisi Thengai Paysam cold. I made this on the day of Ugadi this year for a change. No, actually the truth is i was too tired to make holige and so i decided to keep it simple and make Arisi Thengai Payasam. I soaked the rice the previous night because i was so sure that i was going to wake up late the next day. But as luck would have it, i woke up early on the day of Ugadi. You need not soak the rice overnight like i did to make this payasam. Soak some raw rice in hot water for about 1 hour and you are good to go to make Arisi Thengai Payasam. Just make sure your coconut is fresh and not desiccated.

Ingredients

  • Freshly grated coconut 3/4 c
  • Raw rice 2 tbsp
  • Jaggery 250 g or 1 cup grated
  • Full Fat Milk 1 cup
  • Water 1/2 c
  • Cardamom powder 1.5 tsp
  • Cashews 10 broken
  • Raisins 10 to 15 broken
  • Ghee clarified butter 1/3 cup

Instructions

  • Soak raw rice in hot water for an hour.
  • Once the rice has soaked, combine it with coconut and 2 tbsp milk and grind to a smooth puree in a blender. Set aside
  • In a pan, combine the water and jaggery and heat this until the jaggery melts completely.
  • Make sure you do this on medium flame as jaggery burns quickly.
  • Once done, strain the mixture to get rid of any impurities.
  • Set this aside.
  • Heat a heavy bottomed pan with 2 tbsp ghee.
  • Add the ground paste and mix well and lower the flame to medium low.
  • Keep stirring the mixture until the coconut paste has absorbed all the ghee.
  • When you see no more ghee, add the prepared jaggery syrup along with the cardamom powder and mix well using a whisk.
  • Make sure the flame is medium and be sure to whisk thoroughly or the mixture may become lumpy.
  • Once the paste becomes thicker like that of porridge, add the milk and mix well.
  • Add about 1.5 tbsp ghee to the payasam at this stage and mix well.
  • Continue to simmer this for about 5 to 6 mins on medium flame.
  • Once done, transfer to a clean serving dish.
  • Heat a small pan with the remaining ghee.
  • Add the broken cashews and fry till golden. Drain and add to the payasam.
  • To the same pan, add the raisins and fry till they turn plumpy.
  • Once done, add this along with the ghee to the payasam and mix well.
  • Your arisi thengai payasam is ready.

Blueberry Ginger Limeade is a simple drink made with fresh blueberries, lime and ginger. Summer is here and it is beginning to feel sweaty and hot already. And it is not even the middle of April, yet! Thanks to global warming and pollution, the mercury rises more and more as every year passes by. It is also the time when Navratri fast begins. In order to keep one hydrated and fresh during these times, it is necessary that we drink lots of fluids in some form or the other. May it be in the form of juice, smoothie, lassi or this delicious blueberry ginger limeade, its essential that we sip on fluids all day during summers.

This limeade came together just like that when i was aimlessly flicking channels and realised i was super thirsty. Well, i was thirsty and i wanted something more than water. I opened my fridge and found that a box of fresh blueberries were unopened. It is very rare that such miracles happen in my fridge- finding fresh bluberries uneaten, that is. Father and daughter promptly devour the berries even before i get to think of what to make with them. Such is life, these days. Sigh!

I technically wanted to make a blueberry ginger lemonade. But i discovered that what i had on hand were limes and not lemons. So it had to be blueberry ginger limeade. Before you ask what is the difference between a lemon and a lime, let me tell you this. A lemon is a lemon and a lime is a lime. Sounds lame? Well. Not really. Because each has its own distinct flavor which gets more pronounced when combined with certain elements like ginger ? Or blueberry? You got to believe me on this one. Oh, a fun fact here- Lemons are believed to have originated in Burma first while limes are believed to have been cultivated in Persia. And limes are technically hybrid. I guess that is enough fun fact, eh? Back to the blueberry ginger limeade- so, i decided to use up those gorgeous Thai green limes that i had picked up from the farmers’ market. And somewhere midway, i had this uncontrollable craving to have a ginger beer. And so, enter GINGER. I love ginger. Period. The health benefits of ginger are many and it is notable for its digestive properties. So, i added a bit of ginger even though i was sure that this blueberry ginger limeade and that ginger beer that i craved for are miles apart. And its pretty much the routine from there on. I had a simple sugar syrup in stock. So i blitzed up some berries, a dash of ginger, the juice from about 2 limes and added this to the syrup. And there my blueberry ginger limeade was almost good to go. So, here you are – the recipe for blueberry ginger limeade.

Ingredients

  • Blueberries 12 fresh see notes
  • Grated ginger 1.5 tsp
  • Lime juice 3 tbsp
  • Sugar 1/2 c
  • Water as required
  • Ice cubes to serve

Instructions

  • Combine sugar and 3/4 c of water in a pan.
  • Heat this mixture until the sugar dissolves completely.
  • Let cool.
  • Blend the berries and ginger to a smooth puree in a blender. I like chunks of berries in my drinks. So i did not blend till very smooth.
  • Add this to the cooled sugar syrup and mix well.
  • Add lime juice to this and mix.
  • To make blueberry ginger limeade, combine 1 part of blueberry limeade syrup with 2 parts of water.
  • Top with ice cubes and serve cold.

Notes

1. Frozen blueberries will work just fine in this recipe.
2. If you dont have access to limes, then try and experiment with lemon juice or orange juice.

Coriander Paratha or Hara Dhania Ke Parathe is an easy paratha recipe that is stuffed with fresh coriander leaves and spice powders. Usually, many people make coriander paratha with fresh coriander kneaded into the dough. So, when i came across this recipe while browsing through a cookbook, i was hooked. I liked the idea of using the fresh coriander leaves itself as a stuffing along with besan (chickpea flour). This coriander paratha that is also vegan makes a great breakfast option or even a filling dinner when served with a light salad. I usually make this paratha when i run out of main stream veggies and we enjoy the flavor burst from the fresh coriander leaves. We are great fans of coriander and mint and it came as no surprise when i found that Lil A enjoyed this with some fresh home madeย yogurt.

You can also make these parathas for a picnic or travel. The key thing to making some fabulous coriander paratha lies in roasting the gram flour correctly. If you do not roast the gram flour properly, you will have a raw taste in your stuffing that is quite unpleasant. If you are bored of making coriander chutney with all that coriander excess, i m sure you will find this hara dhania ke parathe a welcome change. Let us now check how to make coriander paratha step by step.

Step By Step Tutorial For Making Coriander Paratha

Heat a pan and dry roast the gram flour until light brown and aromatic. Make sure you do this on medium flame and keep an eye on the flour as it tends to burn quickly.

To the roasted gram flour, add the chili powder, coriander powder, cumin powder, chaat masala and salt along with finely chopped coriander leaves. Mix well.

Take a ball of dough. Flatten it into a disc and dust with some flour. Roll into a 1/2″ thick circle. Place a tbsp of the filling in the middle and pinch the ends of the dough together like a bag as shown in the picture.

Now flatten the stuffed dough ball gently and dust with flour.

Gently roll out the stuffed and flattened dough disc into a 1.5 cm thick round making sure you do not tear it. Once done, heat a tawa. Place the flattened paratha on it.

Flip the paratha over after a min and smear oil. Cook for 30 more seconds and flip over. Smear oil on the other side and cook till golden dots appear as shown in the picture.ย 1-coriander paratha5

Remove from flame and serve hot with yogurt and pickles or any curry of your choice. We love our coriander paratha piping hot, preferably straight from the tawa.

Ingredients

  • Whole wheat flour 1.5 cups
  • Salt to taste
  • Oil to fry the parathas
  • For The Stuffing
  • Besan/ Gram flour/ Besan 2 tbsp
  • Coriander leaves 1 cup tightly packed chopped finely stalks and all.
  • Chili powder 1 tsp
  • Coriander powder 1 tsp
  • Cumin powder 1 tsp
  • Chaat masala 1/2 tsp
  • Salt to taste

Instructions

  • In a large mixing bowl, place the wheat flour and salt and mix well using a whisk.
  • Knead using water to a smooth non sticky dough and set aside.
  • To prepare the stuffing, heat a pan and dry roast the besan (chickpea flour) until aromatic and light brown. Takes 2 to 3 mins on medium flame.
  • Once done, let cool.
  • To this, add the chili powder, cumin powder, coriander powder, salt and chaat masala along with chopped coriander leaves and mix well.
  • Divide the dough into 8 parts and shape each part into a ball.
  • Flatten a ball of dough into thick disc, dust lightly with flour and roll out into 1/4" thick disc
  • Place a tbsp of filling in the middle and pinch the ends of the dough together.
  • Flatten this gently using your hands and dust this lightly with flour.
  • Roll this into a 1.5 cm thick circle using a rolling pin, taking care not to tear the dough.
  • Once done, heat a tawa and place the paratha.
  • Cook till golden spots begin to appear on each side.
  • Smear each side with oil once spots appear and cook each side for another 30 secs, flipping the paratha in between.
  • You will know the paratha is done when there are golden spots on the surface of the paratha.
  • Once done, remove from flame and serve hot.
  • Repeat with remaining dough and stuffing.

The yogurt accentuates the tang in the soup and the ginger makes it zesty and refreshing.   • Cantaloupe 1 medium peeled seeds removed and cubed ( should amount to 1.5 cups)
  • Orange juice 1/2 cup
  • Orange zest 1 tbsp
  • Mint leaves 3 to 4
  • Freshly grated ginger 1 tbsp
  • Green chili 1 small mincely finely
  • Pink salt 1 tsp
  • Fresh low fat yogurt 2 tbsp
  • Cinnamon powder 1/2 tsp
  • Lime juice 1 tbsp
  • Olive oil 1 tbsp
  • Few Mint leaves for garnish
  • Orange zest 1 tbsp for garnish

Instructions

  • Place all the ingredients except those meant for garnishing in a blender and process until smooth and creamy.
  • Chill in the fridge until ready to serve.
  • Garnish with mint leaves and orange zest.
  • Serve cold.

Notes

1. You may omit the yogurt in case your orange is sour.
2. The olive oil gives a nice flavor and is highly recommended. If you are conscious about calories, you may leave this out.

Sakkaravalli Kizhangu Poriyal, a spicy dry curry made with sweet potato is a wonderful dish that has a delicate balance of flavors. My daughter loves sweet potatoes. She likes them fried or boiled but prefers the fried version to the boiled one. I got a toughie here, i tell you. So i almost always buy a bag of sweet potatoes during my weekly trip to the vegetable market. One Sunday, when i was painstakingly peeling a sweet potato for my daughter, my husband, the not so eloquent Mr.P with a horrible sense of timing, asked me if they were only restricted to Lil A. I was obviously dumb stuck. The man was talking as though i had intentionally deprived him of sweet potatoes.ย  ๐Ÿ™ . So i immediately said no and quickly got to work making this spicy and delicious pan fried sakkaravalli kizhangu poriyal.

This sakkaravalli kizhangu poriyal is made with freshly ground spices, curry leaves, sesame seeds and dessicated coconut. When i began making this poriyal, i had no idea how it would be received. But as always, Lil A surprised me by picking these from her father’s plate and relishing them. So, i knew i had a winner here. The only thing to be kept in mind when making this Sakkaravalli kizhangu poriyal is not to overcook the sweet potato. Even if they are a wee bit under cooked, it is ok because it will get cooked completely as we fry it up in the pan. This sakkaravalli kizhangu poriyal tastes great with any spicy kuzhambu like thisย Arachuvitta Vathal Kuzhambu.ย

Sakkaravalli Kizhangu Poriyal Or Sweet Potato Curry

Ingredients

  • Sweet Potatoes 3 medium
  • Oil 2 tbsp
  • Curry leaves a sprig
  • Mustard seeds 1 tsp
  • Urad dal 1 tsp
  • Hing a small pinch
  • For The Spice Powder
  • Channa dal 1 tbsp
  • Urad dal 1 tbsp
  • Sesame seeds 2 tsp
  • Curry leaves 10
  • Dry red chili 2
  • Pepper corns 2 to 3
  • Cumin seeds 1/2 tsp
  • Coriander seeds 1 tsp
  • Dry dessicated coconut 1 tbsp
  • Salt to taste
  • Oil 1 tsp

Instructions

  • Place the sweet potatoes in pan and cover with enough water to just immerse them.
  • Pressure cook this until fork tender. The skin must come off easily when you try to peel.
  • Once done, drain all the water completely, peel the sweet potatoes and chop them into bite sized pieces.
  • Set aside.
  • Heat a pan with 1 tsp oil.
  • Add the channa dal and urad dal and fry till the dal turns golden.
  • Remove from heat and transfer to a plate to cool.
  • To the same pan, add the remaining ingredients mentioned under the spice powder heading except the coconut and fry till aromatic.
  • Remove and transfer to a plate to cool.
  • Now take the pan off the heat and add the coconut.
  • Give a quick toss until aromatic.
  • Quickly transfer this to the plate.
  • Once the mixture has cooled down, add salt and grind to a coarse powder in a blender. Set aside.
  • Heat a wide shallow pan with 2 tbsp oil
  • Pop the mustard and tip in the urad dal and hing along with the curry leaves.
  • Now, add chopped sweet potatoes and shallow fry on medium flame until golden.
  • Make sure you keep tossing them gently once in a while.
  • This takes about 7 mins on medium flame
  • Now, add the ground spice powder and mix well.
  • Continue to cook on medium flame for about 2 to 3 mins.
  • Once done, remove from heat and serve hot with rice and kuzhambu

Sri Lankan Dhal Curry is a mild dal ( as Indians call it) that is beautifully flavored with the goodness of curry leaves and coconut milk. I have often observed that the Sri Lankan cuisine has a lot of similarity to Tamil and Kerala cuisines. And this can be found in their abundant usage of coconut, curry leaves and spices like cinnamon and cumin. Ceylon Cinnamon is one of the best that you can find in the world and it is priced for its flavor and quality at atrocious figures. Coming back to the Sri Lankan Dhal curry, the dal itself is a very simple recipe that has not more than three main ingredients. Also, this Sri Lankan Dhal Curry is a no onion no garlic vegan and gluten free dal and hence can be enjoyed by everyone. We like adding a squeeze of lemon juice to this Sri Lankan dhal curry to oomph the flavors but it is optional. This Sri Lankan Dhal is best enjoyed with rice and some spicy shallow fried curry like thisย Broccoli Potato Pepper Fry orย Chenai Kizhangu Fry.

Basically you can cook this Sri Lankan Dal curry to any consistency you like. We like it a bit on the thinner side so i add more coconut milk. However you may reduce the amount of coconut milk mentioned here for a thicker dal. This Sri Lankan Dhal curry also known as Kottu Dhalย has been adapted fromย Tarla Dalal Website. I found the original version too bland and after several trials, found bliss in this version of Sri Lankan Dhal Curry. A word of caution. Please do not add coconut milk while the dal is simmering at a high flame. This may lead to curdling. Also, please use coconut milk and not coconut cream for this recipe. I used the packaged coconut milk that is so ubiquitous in Singapore but i assure you , homemade coconut milk will work better. In case you use homemade coconut milk, use the second pressed milk. In case you use tetra pack coconut milk, make sure you dilute it with 1/4 c of cold water before adding to the dal.

Ingredients

  • Masoor dal Red Lentils/ Mysoor Dal 1/2 cup
  • Second Pressed Coconut milk 1/3 cup refer notes
  • Turmeric powder 1 tsp
  • Red Chili Powder 1 tsp
  • Salt to taste
  • Coconut oil 1 tbsp
  • Cumin seeds 1 tsp
  • Cinnamon stick 1/2" piece
  • Curry leaves a few
  • Dry red chili 1
  • Lemon juice 2 tsp optional

Instructions

  • Pressure cook the dal along with 3/4 c of water and turmeric until very mushy.
  • Drain any water and mash thoroughly using the back of ladle.
  • Heat a pan with oil.
  • Add 1 tsp of coconut oil.
  • To this add the red chili powder and immediately tip in mashed dal.
  • Bring down flame to low.
  • Add salt and mix well.
  • Let simmer for about 2 mins on medium flame.
  • Bring down the flame to the lowest and add the coconut milk and mix well.
  • Continue to simmer for about 1 min.
  • Switch off flame and transfer to a bowl.
  • Heat another pan with the remaining oil.
  • Crackle the cumin seeds and add the cinnamon, chili and curry leaves.
  • Once the leaves begin to change color, add the tempering to the dhal.
  • Mix well.
  • Add some lemon juice to the dhal if desired.
  • Mix well.
  • Serve hot with rice.

1. In case you are using tinned coconut milk, add 1/4 cup of water to 2 tbsp coconut milk and mix well. Use this in place of the second pressed coconut milk.

How To Make Homemadeย Sriracha Sauce From The Scratch?

Sriracha sauce is a hot sauce that is believed to have originated from eastern Thailand. This spicy sauce made with thai red chilies is a great condiment that you can use to marinate meats or veggies or tofu. It can also be used to make other dips like pesto and mayonnaise. When i went to the library last Sunday, little did i expect to find a whole book dedicated to Sriracha sauce and that too, a vegetarian cookbook. I have read and come across a majority of sriracha sauce recipes on the internet, all of which, more or less call for fish sauce. So imagine my delight when i found theย The Veggie Lovers’ Sriracha Cookbook.

The book opened up a whole new world to me. But hang on! I did mix up two versions of the sriracha sauce when i made mine. Actually, the ingredients called for in the book were all vegetarian but the method they prescribed was very lengthy. Or rather it meant i had to wait. And i was not ready to wait. So i made the sriracha sauce from the scratch followingย White On Rice Couple’ s methodย but used the ingredients that the book called for. Clever, right? Well, not really because a bottle of sriracha is the probably the most ubiquitous condiment you can find in a store. But then the kick of making sriracha sauce from the scratch probably made me go all the way. And to make matters a breeze, a bag of gorgeous thai red chilies were sitting in my fridge? Who can stop after that, eh?

Before i share my Sriracha Sauce recipe with you all, I would like to mention that i used a combination of chili peppers for this. I used 15 thai red chilies, 4 red jalapenos and 2 snacking red peppers. This is because i was really not sure if we could handle the heat in the sauce. If you want your sauce to be milder, then decrease the number of red chilies and increase the number of snacking peppers. Alternatively, you can also use more vinegar or sugar. The sauce keeps well in the fridge for up to a week. I recommend storing it in a clean airtight glass jar. A mason jar will also work well to store this delicious homemade sriracha sauce.

How To Make Homemade Sriracha Sauce From The Scratch?

Sriracha Sauce also called as rooster sauce is a spicy sauce that can be used to marinate meat, veggies or tofu. Works well in other dips and sauces too.

Ingredients

  • Thai red chilies 15
  • Red jalapenos 4
  • Red snacking peppers 2 to 3
  • Rice vinegar 1/4 c
  • Dark soy sauce 1 tbsp
  • Garlic cloves 3 to 4 minced
  • Tomato sauce 2 tbsp
  • Brown sugar 2 tbsp
  • White sugar 1 tbsp
  • Salt to taste
  • Vegetable oil 2 tbsp

Instructions

  • Stem the chilies and peppers and slice them thinly. You may discard the seeds to reduce the heat. Make sure you wear a gloves while doing this.
  • Heat a pan with oil.
  • Add the minced garlic and fry till golden.
  • Now add the sliced peppers and chilies along with the tomato sauce and soy sauce and cook till they become soft.
  • To this add salt and sugar and mix well.
  • Let cool completely.
  • Once cool, add the rice vinegar to the pepper mixture and blend to a smooth paste in a blender.
  • Taste and adjust the seasoning accordingly.
  • You may add more of vinegar or sugar if you find the sauce too hot.
  • I do not recommend adding water.
  • Remove and store in an airtight glass jar.
  • Use as required
