What is Kootu?

In the South Indian world of food, Kootu refers to a creamy lentils and vegetable medley that usually has a freshly ground spice paste added for flavor. When it comes to making this staple recipe, the sky is the limit in terms of combinations.

You will find a few variations to this recipe over here. Feel free to use your veggies and lentils of choice. Here is a handy guide for experimenting with different dals and veggies when making this recipe.

Vegetables and Paruppu for Kootu

Vegetables Lentils
Leafy greens, Zucchini, Bok Choy, Turnip  Moong Dal
Snake gourd, Chayote Squash, Butternut squash  Chana Dal ( Split chickpea lentils)
Carrots, beans, beets  A mix of Chana Dal and Moong Dal
Potatoes, Sweet Potato and Yam  Skip lentils but use legumes like chickpeas or black eyed beans

There is a version of Kootu in every South Indian state. While we make a version that is very similar to Keerai Kootu, Kerala cuisine features recipes like Erisseri which is a medley of veggies, legumes and coconut.

I just have to admit that Kootu is not just a wholesome dish on its own but wins on several levels because of the fact that it is easy, is great in terms of meal prep and naturally vegan.
