Baking and blogging go hand in hand for me. I began experimenting with baking and it is only this interest which perked up my courage to be more experimental in cooking. I started with a humble eggless chocolate cake. It was a run of the mill attempt but that did not discourage me. Ever since that paltry cake that i baked, i ve read up so much on baking that i sometimes feel if you put me in the oven, i ll come out as one pretty nice cake. All that reading has rewarded me with some piece de resistance. This molten lava cake is one such rarity where everyone and anyone who ate it fell in love with me and the cake immediately. Result. I had a very jealous husband at the end of it all. So lets make people fall in love again shall we?
And i must tell you that you will never never look at molten lava cakes the same way after you bake it at home.
Recipe For Molten Lava Cake

Prep Time: Under 20 mins
Cook Time: 10 to 12 mins
Makes 10 small cupackes
What you need?
Cooking chocolate dark ones 125 g
Cooking chocolate the sweet ones 100g
Eggs 4
All purpose flour ½ cup
Powdered sugar ⅔ cup
Unsalted butter 1 cup plus some more to grease your cake pan or muffin pans
For Garnish:
Strawberries or cherries 10 to 12
Powdered sugar 2 tsp
For Serving:
Ice cream or whipped cream
I know the ingredients list is ridiculously short but that s all you need to make this decadence.
How to make it?
If you want to get a nice drool worthy lava cake, then you have to know the double boiler technique. No shortcuts on that. No microwaving does not fetch you amazing results so please gear up to do the thingie on the stove. Remember, we had a life without the microwave too??
Chop up the chocolate pieces into bits ( turns out to be an energy consuming task but believe me, you will not regret it one bit). Place the chocolates in a bowl which is shallow and which will fit into a larger bowl which is deeper. Now, fill the larger bowl with water half way up and let it boil. Once the water starts boiling, place the shallow bowl over the larger bowl.
You can see that the chocolate starts melting in a few minutes. Melt the chocolate until smooth and shiny. Keep stirring with a wooden spoon and make sure there s no absolutely no contact with water. Water s the biggest enemy for chocolate.
Once the chocolate is melted, add the butter to this and incorporate well till the butter melts into the chocolate. Keep aside to cool.
Cream eggs and sugar till the eggs are light and fluffy. Add the flour next and combine well making sure there are no lumps.
Now, add the melted chocolate into this mixture. If you have that heavenly chocolate sticking to the bowl, go on and take a nice lick.
At this stage, preheat the oven to 180 C. Grease your muffin pans with butter. I made the mistake of using muffin liners but please dont.
Now, mix the chocolate well into the egg mixture.
Spoon the batter half way up in muffin pans. Bake in the preheated oven for 10 mins and longer if you want a stiff center. I like my center a lil gooey so i baked it for 12 mins.
My cakes had rosen beautifully and cracked and they had a lovely gooey centre just like the way i want them.
