If its just me for breakfast at home, i always turn to a smoothie. Its easy, quick and filling all at the same time, guilt free. I sometimes make a smoothie to supplement a light breakfast. Its usually when i make a sandwich or some kanda batata poha. I made a sandwich a few days back and made this smoothie along with that. This is a milk free smoothie but its filling because of the fruit involved. It can be made ahead and chilled to be enjoyed as a drink any time of the day.

Recipe For Carrot And Apple Smoothie
( Smoothie with carrots and apples)

Makes 2 largish glasses
Allergy Info: Vegan, Gluten Free

Ingredients

Apples 2 crunchy kinds peeled and cored.
Carrot 1 med peeled and cubed
Celery stick 1 chopped finely
Juice from 1 small lemon
Sugar 2 tbsp
Water 1/2 c to 3/4 c
Ice cubes to serve

Directions

I used my extractor to make this smoothie. You can alternately make this in a blender and strain later or use a food processor.
Put apples, carrot and celery along with some sugar in the extractor.
Add 1/2 c water to this and blend until smooth.
If you are doing this in a blender, remove and strain.
Add the remaining water and lemon juice to this.
Mix well.

Add ice cubes and serve cold.
You can also add a cucumber to this smoothie to make it more refreshing.
