Akki Roti - Rice flour flatbread with edamame

This healthy Akki Roti has edamame, carrots and dill leaves, making it packed with nutrition and flavor. Gluten free and vegan friendly dish ideal for brunch or breakfast.

Ingredients

For the edamame

  • 1.5 cups edamame beans (shelled and frozen)
  • 2 cups water

For the Roti

  • 350 grams rice flour
  • 2 tsp green chillis finely chopped
  • 1.5 tsp ginger garlic paste
  • 1.5 tsp white sesame seeds
  • 1.5 tsp cumin seeds
  • 1.5 tsp red chili powder
  • salt to taste
  • 1/2 cup carrots shredded
  • 3/4 cup onions finely chopped
  • 1/4 cup dill leaves finely chopped
  • 2 cups water You may need more or less (see recipe notes)

For cooking

  • 3 tbsp peanut oil any neutral flavored oil will also work. You need approximately 2 tsp oil for every Roti.

Instructions

Instant Pot Edamame Beans

  • Edamame beans cook really well in the Instant Pot. To cook edamame beans in an electric pressure cooker, place 1.5 cups frozen edamame beans in a steamer basket.
  • Add 2 cups water to the inner pot of the Instant Pot. Place a tall trivet into the inner pot. Now, place the steamer basket over the tall trivet.
  • Close the Instant Pot, turn the VALVE to SEALING. Press Pressure Cook- High and set the timer for 1 minute.
  • Allow the cooking cycle to complete. When done, press CANCEL and do a gradual quick pressure release by turning the VALVE to VENTING.
  • Open the lid and let the beans become warm to touch.

Making Akki Roti Dough

  • Mash the edamame beans well with a potato masher. Set aside.
  • To a bowl, add rice flour, spices and seasonings along with carrots, onions, dill leaves and mashed beans.
  • Combine this to make a crumbly mixture.
  • Add water little by little and mix everything into a slightly loose dough.

Shaping the dough into Roti

  • Grease a sheet of parchment paper with 2 to 3 drops of oil.
  • Take an orange sized portion of the dough and place it on the parchment paper.
  • Wet your hands and pat the dough into a slightly thick circle.
  • Make three small holes in the middle of the shaped Roti.

Cooking

  • Heat a cast iron Tawa.
  • Now, transfer the shaped roti onto the Tawa and peel back the parchment sheet gently.
  • Drizzle a tsp of oil around the edges and in the middle of the Roti.
  • Cook covered on low heat for 1 to 2 mins, until you see no raw dough on the surface.
  • Now, flip and continue to cook uncovered until the edges crisp up and brown spots appearing on the side that is cooking.
  • When done, flip and cook for 30 to 40 seconds to crisp up the Roti on both sides evenly.
  • Serve hot.
