Pear Arugula and Avocado Green Smoothie is a nutrient packed vegan smoothie that can be used in a smoothie bowl along with toppings of choice.

Ingredients

  • Anjou Pear 1 peeled and cored See notes
  • Ripe Avocado 1 pitted
  • Arugula leaves ½ c packed
  • Lime juice 1 tbsp
  • Flax meal 1 tbsp
  • Sunflower seeds 1 tbsp
  • Tender coconut water ½ c
  • Sweetener of choice optional (see notes)

Instructions

  • Place everything in a blender and blend to a smooth puree.
  • Chill and serve cold.

Notes

1. Any kind of pear will work but for the asian pear or the Chinese Pear.
2. I did not use any sweetener in this smoothie. However you may use stevia, agave or maple syrup if desired.
