Aloo Tikki

Potatoes, Paneer, nuts and raisins come together in this easy snack that also make for great burgers.

Equipment

  • 1 Air fryer or Oven . Please refer blog post for various cooking methods
  • 1 Mixing bowl
  • 1 Sauce Pan
  • 1 set of measuring spoons and cups
  • 1 Spatula

Ingredients

  • 10 oz boiled and peeled potatoes Use 3 medium size potatoes and boil in a sauce pan.
  • 1 cup grated panner
  • 12 cashews chopped roughly
  • 3 tbsp Raisins
  • 1 tsp crushed coriander seeds
  • 1 tsp ground cumin
  • 1 tsp Garam masala
  • 1.5 tsp Red paprika
  • 1.5 tsp very finely chopped ginger
  • 3 tbsp finely chopped cilantro
  • 1.5 tsp Kosher salt or to taste
  • 2 tbsp vegetable oil

Instructions

Prep Work

  • Wash, halve and boil the potatoes.
  • Drain them completely, allow them to cool and peel the potatoes.
  • Grate the paneer.

Making the Tikki mixture

  • To a mixing bowl, add the boiled potatoes, ground spices, cashews, raisins, crushed coriander seeds, grated paneer, salt, finely chopped ginger and chopped cilantro.
  • Mash the potatoes, mix and combine everything to a stiff dough.
  • Shaping the Tikkis
  • When done, divide the mixture into 12 equal portions.
  • Shape each portion into a 1 inch thick roundel.
  • Air fryer temperature and settings
  • Brush each Tikki with ¼ teaspoon oil or spray them with an oil spray.
  • Arrange them in the air fryer basket in a single layer. Air fry for 12 minutes at 350F (180C).
  • At the half way mark, flip the Tikkis with a wooden or silicon spatula and continue to finish cooking the other side for the remaining 6 mins.

Oven Method

  • Preheat oven to 350F (180C).
  • Arrange the shaped Tikkis on a lined baking sheet.
  • Brush each roundel with ¼ teaspoon oil.
  • Bake in the preheated oven for 15 minutes.
  • Flip the Tikkis after the 8th minute and continue to finish baking for the remaining time.

Stovetop Method

  • Heat a cast iron gridle and brush the surface with 1 tablespoon oil.
  • Place about 5 to 6 shaped roundels on the gridle and cook on medium flame until golden brown on both sides.
